Mexican Arroz con Leche

INGREDIENTS

    • 7 cups water
    • 1 cup white rice
    • 1 cinnamon stick
    • 3 cups Whole Milk
    • 1 1/2 cup of granulated sugar
    • 2 teaspoons orange zest
    • 1 tablespoon vanilla extract
    • Ground cinnamon

    INSTRUCTIONS

    1. Put the water, rice, and cinnamon stick in a medium-size heavy saucepan and set over medium-high heat.

    2. Bring to a boil, uncovered, and cook until rice is tender, for about 18 minutes.

    3. Strain out the liquid.

    4. Return the rice to the saucepan.

    5. Stir in whole milk, sugar, and orange zest.

    6. Continue cooking rice over medium-high heat until rice comes to a boil.

    7. Reduce the heat to low and cook, stirring constantly.

    8. Cook for about 20 minutes, until the mixture becomes thick.

    9. Remove from heat, add vanilla extract, and stir.

    10. Transfer rice pudding to a serving bowl.

    11. Dust with ground cinnamon and serve.
