Throughout middle and high school, I practically subsisted on Nature Valley's crisp and crunchy Oats 'n Honey granola bars. To this day, a mere glimpse of the bold green wrapper gets my stomach grumbling. So when I stumbled upon a recipe hack for the snacktime staple, I knew I had to try it for myself.

My first attempt turned out a batch that, while enticing, wasn't quite right; my roommates happily scarfed them down, but to my nostalgic palate, they were slightly too soft, not quite salty enough, and tasted a little raw. Thankfully, with a few tweaks — notably, toasting the oats and swapping out half the honey for brown sugar for a deeper flavor and a crisper, toastier texture — they're everything my teenage self could've wished for. Even better, they're slightly less sweet, leaving my slightly more sophisticated mid-20s persona pleased as punch as well.

Sometimes this means a quickly blitzed banana-almond smoothie, but most days I can't bear to part with my comfort food of choice, which puts me in a conundrum: how do I fit in the time to both simmer up and dig into a piping-hot bowl of oatmeal before I run out the door?

The solution quickly became apparent after my first taste of baked oatmeal. Don't get me wrong; it's not an exact analogue to a creamy bowl of traditional oaten porridge. It does, however, tick many of the same boxes: it's nearly infinitely adaptable, keeps tummy grumbles at bay for hours, and is, most importantly, delicious. Even better, it can be made ahead and doled out into a to-go container to enjoy at my desk cold, at room temperature, or piping hot, depending on my mood. All in all, a win!

There are certain recipes that every baking enthusiast should master. In my head, I have an imaginary list of these dishes. It's divided into categories and under the cookies subtitle, you will find oatmeal raisin cookies. Since this recipe was not checked off, I recently decided to make them.

After researching recipes, I selected Ina Garten's variation with pecans. Over 50 people have raved about it on Food Network and I have to agree, it's a simple method that yields spectacular results!

Oatmeal raisin cookies are great for mailing to a friend because they are durable and hearty. While they make a wonderful afternoon snack or sweet on-the-go breakfast, my favorite way to enjoy these cookies is in an ice cream sandwich made with vanilla ice cream. Whatever way you eat them, you can't do it without the recipe: get it now.

I love oatmeal and all of its carby goodness. Hopefully you do too because I have a lot of oatmeal recipes to post. This is my latest oatmeal concoction, and it is fabulous.
Ingredients:
1/4 cup oatmeal (I used Coach's Oats)
1 & 1/2 cups brewed chai (I used Tazo, but any kind will do)
1/2 mashed banana
1 Splenda packet
almonds, raisins, and pumpkin seeds to garnish

Cooking tip:
I like my oatmeal really creamy, and this cooking tip seems to really do the trick. Combine oatmeal and 1 cup of the chai the night before, bring to a boil for just a quick second, and then turn off the heat and cover the pot with a lid. In the morning add the other 1/2 cup of chai, mashed banana, Splenda, and finish cooking the oatmeal like you normally would.

Tea oats are heavenly in general, but so far chai flavored has been my ultimate fave.
