Sunday Slow Cooker: Beef Lasagna

After a long holiday of elaborate cooking and feasting, cut yourself some kitchen slack with a dinner that won't wear you thin.

Lasagna, with its layers of meat, sauce, cheese, and noodles, may sound elaborate, but the handy slow cooker takes care of all the work.

You're free to go sale shopping or watch a movie, and you'll return to a meal that's already been made. To free up time for yourself with this recipe, read more.

Beef Lasagna
From Weight Watchers

Ingredients

1 pound(s) uncooked lean ground beef (with 7% fat)
1 small onion(s), chopped
1 medium garlic clove(s), minced
28 oz. canned crushed tomatoes
15 oz. canned tomato sauce
1 tsp. table salt
1 tsp. dried oregano
1/2 tsp. dried basil
1/4 tsp. crushed red pepper flakes, or to taste
1 cup(s) part-skim ricotta cheese
1 1/2 cup(s) part-skim mozzarella cheese, shredded, divided
6 item(s) dry lasagna noodles, no-cook
1/2 cup(s) shredded Parmesan cheese, strong-flavored like Romano or Parmigiano Reggiano

Directions

Heat a large nonstick skillet over medium-high heat. Add beef, onion and garlic; cook, stirring frequently, breaking up meat with a wooden spoon as it cooks, about 5 to 7 minutes. Stir in crushed tomatoes, tomato sauce, salt, oregano, basil and red pepper flakes; simmer 5 minutes to allow flavors to blend.

Meanwhile, in a medium bowl, stir together ricotta cheese and 1 cup of mozzarella cheese.

Spoon 1/3 of beef mixture into a 5-quart slow cooker. Break 3 lasagna sheets in half and arrange over beef mixture; top with half of ricotta mixture. Repeat with another layer and finish with remaining 1/3 of beef mixture.

Cover slow cooker and cook on low setting for 4 to 6 hours. Remove cover; turn off heat and season to taste, if desired.

In a small bowl, combine remaining 1/2 cup of mozzarella cheese and Parmesan cheese; sprinkle over beef mixture. Cover and set aside until cheese melts and lasagna firms up, about 10 minutes.

Serves 6.

Tina Fey Trimmed Down With Weight Watchers

I've been a fan of Tina Fey ever since she was on SNL. With her hit TV show 30 Rock and her recent outstanding imitations of Sarah Palin, I love her even more. She's adorable, smart, and smokin' all rolled into one.

Apparently, she wasn't always as slender as she is now. In a recent Vanity Fair interview, she says that during her early SNL period, she started dieting after seeing herself on camera. She weighed around 150 pounds, and though that's not much for a 5'4" frame, she felt she was starting to look unhealthy. She said, "I looked like a behemoth, a little bit." The star joined Weight Watchers right away. This program involves a pretty strict point system that limits the amount of calories you take in. Good for Tina for losing weight in a healthy way. You can catch her on the cover of January's Vanity Fair looking fabulous.

Source

Speak Up: Is Weight Watchers a Diet?

Weight Watchers has launched a new massive ad campaign that says, "Stop Dieting, Start Living." Now call me crazy, but I've always put Weight Watchers in the diet category so I'm confused.

I love the idea behind the whole stop dieting and start living message, but Weight Watchers is all about going to meetings and counting points. Sounds like a diet to me. Is anyone else thinking this is classic wolf in sheep's clothing?

Let me finish by saying that I think Weight Watchers is a fabulous diet, er non diet, that has really done wonders for a lot of people, I am just not loving this new campaign. What about you guys? What do you think about it all? Speak up and share your thoughts in the comments section below.

Weight Watchers Products to Hit 7-Eleven

Here's some good news for anyone who is a big fan of Weight Watchers: Weight Watchers is going to launch a line of snack cakes and muffins in 7-Eleven convenience stores across the United States. Aside from online and at actual Weight Watchers stores, the products were only sold at national grocery chains, until now. The addition of the mega-convenience store means that if you follow Weight Watchers, you'll have more accessibility to their products, which makes following the program easier - especially since here in California, 7-Eleven is on every corner.

Best Diets for Heart Health

Unfortunately when we start a diet, most of us read a lot into how much weight it is going to help us lose but forget to think about the potential benefits/detriments it could have on our hearts.

A new study published has revealed the heart health of popular diet plans. The highest possible score is 70 and diets that emphasize a variety of fruits and vegetables scored better than those with a heavy protein focus.

Here are the results:

Ornish, 64.6

Weight Watchers high-carbohydrate, 57.4

New Glucose Revolution, 57.2

South Beach Phase 2, 50.7

Zone, 49.8

MyPyramid, 48.7

Weight Watchers high protein, 47.3

Atkins 100-g carbohydrate, 46

South Beach Phase 3, 45.6

Atkins 45-g carbohydrate, 42.3

Is anyone else shocked that the USDA's My Pyramid plan is not even in the top three? Nonetheless, anyone with a personal or family history of heart disease should definitely consider the results of this study as a guide when choosing a diet plan.
