Normally, I steer clear of processed baking mixes and their artificial ingredients, but a pal of mine raves about Fiber One Apple Cinnamon Muffin Mix, so I decided to give the product line a try. I opted for the Banana Nut variation; both flavors yield muffins that contain 20 percent (five grams) of your daily fiber requirements.
Like other brands of boxed mixes, the Fiber One Muffin Mix calls for water, vegetable oil, and eggs.

I grew up loving Banana Nut Bread, and here's a twist on my mom's famous recipe. Since it includes additional fruit besides bananas I can use less sugar, so not only is it naturally sweet and flavorful but it's also full of fiber.

Ever since I saw this muffin top pan ($19.95) on Serious Eats the other day, I can't seem to get it out of my head. The author of the story, a self-professed muffin-bottom lover, employs the pan to make other things, like individual quiches, gratins, and tarts. I, too, have never really understood the allure of the muffin top, but after reading the descriptive uses for the pan, I kind of want one.

The girls and I did a little baking this weekend and concocted a pumpkin muffin recipe that I just had to share. Using pumpkin not only gives these muffins a distinctly autumnal flavor, it keeps the muffins moist without a lot of fat. I added oatmeal for extra fiber and dark chocolate chips for a little extra zip.

Resolutions are hard to keep, but I'm trying really hard to stick to my "bake something new every week" one. It almost didn't happen this week, but somehow I mustered up the energy (okay actually, I sobered up, we had a work happy hour and let's just say I drank a bit more than I should have...) and whipped up some muffins last night. Why muffins?

I don't know about you but I am sick of the boring pale pink, light yellow, and baby blue paper muffin liners. I've been using them my entire life and would prefer something new and exciting to be on the outside of my muffins and cupcakes. Let's all head off to market in search of marvelous muffin liners.

Flipping through Women's Health, I saw a recipe for PMS muffins. How could I not be intrigued? If a muffin could help ease my symptoms, I could become a baking maniac instead of the usual PMS maniac I become.

Lately, as part of an effort to increase our budget for Summer travel, my sweetheart and I have been forgoing restaurant breakfast and brunch on weekends in favor of making our own. Last Sunday, we made his favorite breakfast tart, but this week, I'll be taking advantage of the heaps of blueberries at the farmers market with home-baked berry muffins. I'll either make a traditional muffin recipe or mash blueberries up and include them in the batter for enhanced color and flavor.

I was relieved to see that many of you are also sick of paper muffin liners. We've been using the boring pale pink, light yellow, and baby blue paper muffin liners our entire lives. It's only natural to want something new and exciting for the outside of muffins and cupcakes.
