Whether you're in Brattleboro, VT, or Ponca City, OK, you've got the pick of the crop when it comes to food events this weekend. I know there are Spam and strawberry festivals, but I'm new to the world of rhubarb and horseradish celebrations. What will you be attending?

Me, I like it hot. You name it, I'll sprinkle a little hot sauce on it. I just like the taste (and the heat) but adding spice to your food can curb hunger, strengthen muscles, boost your brainpower and improve mood.

Yesterday morning I had the pleasure of speaking with three of San Francisco's busiest chefs, the men behind the PlumpJack restaurant kitchens. Jack Falstaff's Jonnatan Leiva, PlumpJack Cafe's Rick Edge, and Balboa Cafe's Jose Lemus each stopped by Balboa to deliver a batch of their ultimate chili. Eating out is always a treat, but the problem with eating food someone else makes is that you have no idea how much sodium it's loaded with. 2,300 mg of salt (one teaspoon) is the recommended daily limit for healthy people, but if you have issues with high blood pressure, 1,500 mg is your limit. According to a study by the Center for Science in the Public Interest (CSPI), "Unsafe levels of sodium chloride, or salt, in chain restaurant meals increase one's chance of developing hypertension, heart attacks, strokes, and kidney disease."

I've long been a fan of local talent Chris Cosentino and his offal-inspired Italian restaurant, Incanto. So when news, well, spread last month that Cosentino's salumeria Boccalone Artisan Meats was debuting the first spreadable salame — Nduja, as it's called — to be produced in the States, I knew I had to get my hands on some right away. Did the salumi live up to all its wonderment?
