Easter is this Sunday and you know what that means, everyone is scrambling around prepping for family brunches, lunches, and dinners. This week I'm helping you (check out the Easter egg invitations I made yesterday) plan the perfect springtime celebration with not one, but two fabulous menus! If you're like me and can't decide wether you want to host a brunch or a dinner (both are quintessentially Easter) take a look at each of my menus and choose the one you like better.

Today I'm planning a simple and elegant brunch for Mother's Day. My mom is a fairly picky eater (onions give her heartburn) so I'll be making a breakfast menu suited to her likes and needs, rather than to mine. I think that cooking a special meal for someone is the most honest, pure way to really show them how much you love them.

This Sunday, in case you didn't know, is Mother's Day, so set your reminders and be sure to call your mom. Better yet, you could send her a heartfelt handmade card. Better still, you could make her a beautiful breakfast - which is what I'll be doing for my mom this weekend to show her how much I care.

When approaching health and fitness, many of us have the mentality that less is more. While this may be a healthy perspective to avoid overeating and practice portion control, a restrictive diet can wreak havoc on your mood and leave you wondering whether there’s anything out there you can eat. Instead, alter your state of mind: rather than thinking about what foods to cut out, start to think of your daily menu as a chance to add great-tasting, healthy options.

This year, instead of planning a blowout bash for New Year's Eve, invite everyone over for a New Year's Day brunch. With all of the hustle and bustle from the holidays there was no time to make beautiful invitations! Luckily, we can download, print, and fill out our fabulous New Year's party invite.

When planning a New Year's Day brunch, don't forget to include sweet dishes on the menu. At first I thought French toast would be a bad idea — individual pieces of toast can be too much work — but than I remembered it can be baked! A lemon raspberry French toast strata puffs up into a delicious dessert-like dish.
