Since many of you are celebrating Hanukkah this week, I wanted to share a twist on my favorite latke recipe. I know oil is a huge part of the tradition, but drenching potatoes in a ton of oil isn't exactly the healthiest thing for you, so check out this recipe. It doesn't involve any deep-frying, and mixes grated carrots with sweet potatoes.

Whether you are Jewish or not, everyone loves a good potato latke. And since Hanukkah is coming up, I thought I'd share one of my favorite recipes.
The thing is, this tradition of making latkes has to do with celebrating the miracle of oil, so you can't exactly remove the oil in the recipe.

As FitSugar pointed out, you don't have to be Jewish to love a good potato latke. Well, the same can be said for a full Hanukkah dinner. I mean, who could turn down a hearty veggie soup, roasted meats and more latkes!
