Although I don't drink beer, there are those of us who are gluten free, and would love to drink "safe" beer. I found this, and I thought I'd share:

NEW YORK - As a longtime chef in four-star restaurants, Joseph Pace had seen appreciative customers before. But nothing prepared him for the day that a well-dressed man walked into his Greenwich Village restaurant, ordered a pizza and a beer, and broke into tears.
That man, Pace recalls, had been diagnosed ten years earlier with celiac disease — an incurable affliction that makes the body unable to take anything containing gluten, a protein found in wheat, barley and rye.

I am disappointed and saddened by this news, if it's true:
'The View's' Elisabeth Hasselbeck Sued Over Copyright Infringement
Elisabeth Hasselbeck is being sued by a Massachusetts woman who is claiming that the “View” host plagiarized her idea for a book about celiac disease.
Self-published author Susan Hasset filed a federal lawsuit in Boston claiming that Hasselbeck’s new book “The G-Free Diet: A Gluten-Free Survival Guide” infringed on her copyrights for her own book “Living With Celiac Disease.”
According a report in the Boston Herald, Hasset claims she sent Hasselbeck, 32, a copy of her book in April of last year, in addition to a homemade cooking video, a business card, personal note and newspaper clipping. Hasselbeck published her book last month.

Well, my gluten-free friends..... even though I do my best to read labels, I had a craving for caramels this weekend, and I found a package what I used to enjoy as a little girl:
I bought two packages of these lovely, tasty treats. I ate one package yesterday (5/26), and one package today, as a birthday "treat" for myself.

I hope everyone had a nice holiday. I had the honor of cooking dinner for a small group of four people. The meal was vegetarian (actually vegan, except for one dessert), mostly organic, with no added sugar and nothing refined.

Cheating the standard protein tests is easy, but industry hesitates on alternatives

After hundreds of dogs and cats fell ill this past spring, government officials traced the source to melamine, a nitrogen-rich compound found in plastics and fertilizer that, when ingested by the animals, crystallized in their kidneys and caused renal failure. The U.S. Food and Drug Administration later announced that producers may have deliberately added the compound to wheat gluten and rice protein concentrates to inflate the measured amount of protein.

I've discovered Quinoa flour! I was able to easily substitute 1/2 cup of the all purpose flour with Quinoa flour. This added a full 8 gms protein and only 4 gms of unsaturated fat.
