I have a favorite Tilapia recipe that I will try and remember to share... the recipe is at home and I cannot remember it off the top of my head. So, I found another one.

This plate is definitley one of my favorites. It’s quick, easy and delicious!
Cook Time: 10 Min; Prep Time: 10 Min; Servings: 2
Ingredients:
4 skinless tilapia fillets (1 pound total)
Freshly ground black pepper to taste
1 tablespoon dried basil
¼ cup Parmesan cheese
2 teaspoons olive oil
For the Green Beans:
1/2 pound green beans, ends trimmed
¼ cup fresh lemon juice
2 teaspoons freshly grated lemon zest
Freshly ground black pepper to taste
1 tablespoon olive oil
Directions:
Preheat the broiler.

Sautéed Tilapia with Lemon-Herb Glaze
Serves 4

This healthy, flavorful, fast treatment makes just about any fish glorious, especially a mild-mannered one like tilapia. Serve with brown rice or whole-wheat pasta and a colorful salad or green vegetable. (And yes, you can eat the lemon slices—they’re not just a pretty garnish.)
*Note: I served the tilapia with zuccini squash and a hearty, 100% whole grain bread loaf.

I enjoy tilapia because it's a light, flaky white fish that doesn't count you an arm and a leg like most seafood. I love seafood, but I often find that it just doesn't fit into the budget like I wish that it would. So, in this case, I squeeze it in by adding some pantry staples.

INGREDIENTS
2 (6 ounce) fresh tilapia fillets
1 teaspoon spicy brown mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon lemon juice
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
1/2 teaspoon grated Parmesan cheese
1 teaspoon fine Italian bread crumbs
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Spray a glass baking dish with cooking spray.
Place tilapia fillets into prepared baking dish, and bake in preheated oven for 10 minutes.

Last night was quick and easy night at our house. I love fish night...I can whip something up in about 20 min and it's good for you food! We usually try to do fish night at least once per week.

OK girls. I tried to find two easy and healthy recipes that are great for the summer. I thought that a fish dish would be awesome and you can't go wrong with a good steak on the BBQ.

Its hard to find a really great, healthy dish! I was searching for something really good, and I found this Ellie Krieger recipe on Foodnetwork.com. Tried it last night, and it was delicious!
