I'm sure you've heard me mention stevia in past entries. Now it's time to really talk about it.
Stevia (also known as SweetLeaf) is an extract from the stevia plant found in South and Central America.

I hope everyone had a nice holiday. I had the honor of cooking dinner for a small group of four people. The meal was vegetarian (actually vegan, except for one dessert), mostly organic, with no added sugar and nothing refined.

I am not a very accomplished cook, and I certainly don't consider myself a seasoned baker. However, I found an incredibly simple bread recipe for a bread that met all my nutritional standards. It's made primarily from spelt flour which is far more nutritious than wheat (and not refined), and contains no yeast.

I was given the honor of cooking Thanksgiving dinner for my family this year. It was only three of us so it wasn't a huge challenge, but still a fun project!
This meal is pretty similar to my Halloween Dinner, but the food was such a success I had to make it again.

This comes from The Rosedale Diet cookbook and is spectacular! You can serve it over steamed spinach or rice.
1 onion
3 Tbs ghee (clarified butter) (I used Smart Balance Buttery Spread)
2 boneless, skinless chicken breasts
2 Tbs curry powder
3 garlic cloves
1 can low-fat coconut milk
2 bunches spinach, well washed
Stevia (Splenda) to taste--I didn't use this, so I'm not sure what it would taste like!

This may be a touchy subject because I know how many avid Vitamin Water drinkers are out there, especially in our increasingly health-conscious (but misinformed) society. However, it's time to face the facts!

Oatmeal can be a healthy, delicious, filling breakfast. However, if you buy pre-flavored varieties, you are inevitably adding sugar, salt, and more calories. It is much smarter to buy plain oatmeal and add the variations yourself.
