In response to Mme. hart's request for a healthier pumpkin cheesecake recipe, I spent the weekend, calculator in hand, working on lightening up my recipe. I ended up with one that was great tasting and had a real cheesecake texture by using 1/2 light cream cheese and 1/2 yogurt cheese.

whenever you're dieting (or attempting to), there comes a time when you're hit by an attack of "i need that _________ or i will die". and usually, the food in question would be a high fat, high cal snack that you totally can do without.
to me, the biggest culprits would be fries and chips.

This comes from The Rosedale Diet cookbook and is spectacular! You can serve it over steamed spinach or rice.
1 onion
3 Tbs ghee (clarified butter) (I used Smart Balance Buttery Spread)
2 boneless, skinless chicken breasts
2 Tbs curry powder
3 garlic cloves
1 can low-fat coconut milk
2 bunches spinach, well washed
Stevia (Splenda) to taste--I didn't use this, so I'm not sure what it would taste like!
