to cook the squash:
in a large pot (or dutch oven), cover whole squash with cold water. bring to a boil on high heat over the stove, then lower heat, cover, and allow to boil for about 30 minutes. remove squash from water and carefully cut in half lengthwise (squash will be hot!

This Spring I've been looking for healthy dinner ideas that are different, tasty, and healthy. I was delighted to find this recipe for spaghetti with summer squash and peppers. Granted, it's not the easiest to make (in terms of cutting and slicing all the veggies) but it's really filling, super tasty, and definitely worth putting your knife skills to work.

Two nights ago I made this for dinner and Baby J gobbled it up. (I cut noodles into small pieces) In her portion I also added pureed squash. I think other pureed veggies can be hidden in this ;) Maybe cauliflower :ponder:
This is also a great recipe to double (or triple) up on and freezes well.

Okay, maybe it's not silly at all I just wanted a cool name. Spaghetti is probably the easiest thing to make, but tonite I wanted to fancy mine up a little. Make it a little different.

Don't ask me where I found this recipe, I read it online somewhere and then adapted it from memory.
INGREDIENTS (all measurements are approximate)
2 cloves garlic, minced
1 large shallot, minced
1 large zucchini, ends cut off and cut in half lengthwise
1 large or two small yellow squash, ends cut off and cut in half lengthwise
1/2 large green pepper, sliced
1/2 large red pepper, sliced
1/2 red onion, sliced into thick rings
palmful parsley, chopped
2 tbsp olive oil
1/4 cup white wine
few splashes soy sauce
1/2 cup chicken or veggie broth (I used my own homemade veggie broth but any broth is fine)
Cooked spaghetti or linguine (we used wheat pasta because we are dieting)
salt and pepper
PREPARATION
Grill the zucchini, yellow squash, peppers and onion until soft but not mushy. We used our Foreman grill because it's cold outside
When the veggies are done, cut them into bite-sized pieces.
