Bacon and Egg Spaghetti/Spaghetti alla Carbonara
Ingredients
salt and freshly ground pepper
6 tablespoons/90ml extra-virgin olive oil
3 oz/90g thinly sliced pancetta or bacon, cut into julienne strips
1 ¼ /600g spaghetti
3 egg yolks
6 tablespoons/45g freshly grated Parmesan cheese
Method
In a large pot bring 6qt/6 l salted water to a boil.
In a large frying pan, heat olive oil and pancetta or bacon together over medium heat. Sauté until crisp and golden, about 5 minutes.

Two nights ago I made this for dinner and Baby J gobbled it up. (I cut noodles into small pieces) In her portion I also added pureed squash. I think other pureed veggies can be hidden in this ;) Maybe cauliflower :ponder:
This is also a great recipe to double (or triple) up on and freezes well.

spaghetti squash with lemon and capers

to cook the squash:
in a large pot (or dutch oven), cover whole squash with cold water. bring to a boil on high heat over the stove, then lower heat, cover, and allow to boil for about 30 minutes. remove squash from water and carefully cut in half lengthwise (squash will be hot!

Arthur's been talking about his spaghetti and meatballs for a week or two around the office, so I got the bug to make some myself tonight. I looked around at recipe after recipe and settled in on Rachael Ray's Spaghetti and Meatballs Recipe from foodtv.
I don't actually like Rachael Ray, but the recipe seemed simple and somewhat interesting with the Worcestershire sauce, and I have to say I enjoyed the meatballs- also the recipe was insanely simple.

Ingredients:
-spaghetti
-2 to 4 chicken breasts, cooked and cubed
-roma tomatoes (or just regular tomatoes), wedged
-croutons
-ranch dressing
-parmesan cheese
-seasonings (ex. parsley, basil, oregano, garlic)
*Cook the spaghetti, rinse with cool water and set aside
*Cook the chicken in a pan, adding whatever seasonings you like
*Mix in the chicken and tomatoes
*Add ranch dressing and mix throughly to coat
*Top with croutons and parmesan cheese
Serve chilled
Excellent on days when you're in the mood for spaghetti or pasta but can't stand to eat anything hot.
Also, very popular when you have to bring a dish to a picnic or party

I was browsing the Williams Sonoma website for some Yum Marks when I came across this recipe. Although I've never made it, it's absolutely drool inspiring.
Spaghetti with Stuffed Meatballs
Kids will love to lend a hand - literally - with this recipe.

I get in brand ruts. I've used Prego Three Cheese spaghetti sauce since college (I think because it was cheap) but for the past few months I've been enjoying buying different brands and flavors to see what else is out there. Currently I'm liking the Classico brand, the Tomato and Basil, the Spicy Tomato and Basil (great in lasagna, by the way...) and also the Spinach Florentine.

This Spring I've been looking for healthy dinner ideas that are different, tasty, and healthy. I was delighted to find this recipe for spaghetti with summer squash and peppers. Granted, it's not the easiest to make (in terms of cutting and slicing all the veggies) but it's really filling, super tasty, and definitely worth putting your knife skills to work.
