 <title>Shrimp Scampi With Snap Peas</title>

&lt;p&gt;Serves: 4; Prep Time: 10 min.; Cook Time: 10 min.&lt;/p&gt;
&lt;p&gt;Ingredients:&lt;br /&gt;
1 tablespoon olive oil&lt;br /&gt;
2–3 garlic cloves, minced&lt;br /&gt;
1 pound uncooked medium shrimp, peeled and deveined&lt;br /&gt;
1 cup shelled fresh or frozen sugar snap peas (do not defrost if frozen)&lt;br /&gt;
1 teaspoon dried oregano&lt;br /&gt;
1/2 teaspoon salt&lt;br /&gt;
1/4 teaspoon ground black pepper&lt;br /&gt;
1/4 cup vermouth or dry white wine&lt;br /&gt;
1 tablespoon cornstarch&lt;br /&gt;
1/2 cup reduced-sodium chicken broth&lt;br /&gt;
2 cups cooked instant brown rice&lt;br /&gt;
Directions:&lt;br /&gt;
Heat oil in a large nonstick skillet over medium-high heat. Add garlic and sauté 2 minutes, until soft.&lt;br /&gt;
Add shrimp and peas and sauté 1 minute. Toss in oregano, salt and pepper and stir to coat.&lt;br /&gt;
Add vermouth or dry whie wine and simmer 1 minute.&lt;br /&gt;
In a separate bowl, dissolve cornstarch into chicken broth until smooth; add mixture to skillet. Simmer 2 minutes, stirring frequently until sauce thickens and shrimp are bright pink and cooked through. Serve scampi over rice.&lt;br /&gt;
Note: To make a thinner sauce to serve over linguine instead of rice, increase chicken broth to 3/4 cup. &lt;/p&gt;

&lt;p&gt;3 tablespoons soy sauce&lt;br /&gt;
2 tablespoons rice wine&lt;br /&gt;
1 tablespoon brown sugar&lt;br /&gt;
1/2 teaspoon cornstarch&lt;br /&gt;
1 tablespoon vegetable oil&lt;br /&gt;
1 tablespoon minced fresh ginger root&lt;br /&gt;
1 tablespoon minced garlic&lt;br /&gt;
1 pound beef round steak, cut into thin strips&lt;br /&gt;
8 ounces snow peas &lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;In a small bowl, combine the soy sauce, rice wine, brown sugar and cornstarch. Set aside. &lt;/p&gt;
&lt;p&gt;Heat oil in a wok or skillet over medium high heat. Stir-fry ginger and garlic for 30 seconds. Add the steak and stir-fry for 2 minutes or until evenly browned. Add the snow peas and stir-fry for an additional 3 minutes. Add the soy sauce mixture, bring to a boil, stirring constantly. Lower heat and simmer until the sauce is thick and smooth. Serve immediately.&lt;/p&gt;

½ cup grated parmigiano-reggiano cheese&lt;br /&gt;
Salt and Pepper (for people’s portions only)

&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;&lt;br /&gt;Bring a medium pot of water to a boil, salt it, add the orzo, and cook until just before al dente, about 7 minutes. Add the peas and cook for 1 minute; drain and return the pasta and peas to the pot.&lt;br /&gt;
While the pasta is cooking, in a medium saucepan, cover the carrots with water and bring to a boil.  Season with salt and cook until tender, about 12 minutes. Drain, reserving about ½ cup cooking water, then transfer the carrots to a food processor. Add the reserved cooking water and honey, if using, and process until smooth.&lt;br /&gt;
Stir the carrot puree into the pasta and peas. Stir in the parmigiano-reggiano. Portion out half for the dog and let cool before serving; season the people’s portion with salt and pepper.  &lt;/div&gt;

&lt;p&gt;1. Roast beets for an one hour and half at 400 covered with sherry vinegar, salt, olive oil. Let cool and slice and peel into 1/8 inch slices&lt;br /&gt;
2. Peel, blanche until tender, and shock in ice bath english peas, fava beans, chick peas, and fiddle-head ferns&lt;br /&gt;
3. Peel baby carrots and slice into 1/4 inch at an angel and cook in 2 oz mirin (sweet cooking sake), 1 tbsp of butter and cook down and cook until tender. &lt;/p&gt;
&lt;p&gt;Creamy tarragon &amp;amp; sherry vinaigrette&lt;br /&gt;
2 tbsp tarragon mustard&lt;br /&gt;
2 tbsp sherry vinegar&lt;br /&gt;
1 tbsp of chopped tarragon&lt;br /&gt;
1 tbsp of chopped dill&lt;br /&gt;
1 egg yolk&lt;br /&gt;
1/4 cup of olive oil&lt;br /&gt;
salt and pepper to taste&lt;br /&gt;
(dressing for 4 people) &lt;/p&gt;
&lt;p&gt;4. Plate beets and drizzle and rub vinaigrette. With any reminder of the vinaigrette dress all except the carrots.&lt;br /&gt;
5. Place evenly scattered on the plate and scatter any left over dill and tarragon! &lt;/p&gt;
&lt;p&gt;This is one of my favorite salads for this time of season! So if you are interested get started! &lt;/p&gt;

Bacon&lt;br /&gt;

Leftover rice (don&#039;t use freshly cooked)&lt;br /&gt;
Lite soy sauce&lt;/p&gt;
&lt;p&gt;Method&lt;/p&gt;
&lt;p&gt;In a wok, heat cooking oil until very hot. Pour in beaten eggs. Once the eggs are cooked, remove from wok and set aside. Then fry bacon in the wok for a few minutes. Then add the frozen peas to the bacon and heat through. Then add leftover rice and soy sauce. Stir fry until everything is heated. Finally, return eggs to wok, mix and serve. Yummy!&lt;/p&gt;
