Preheat oven to 350
Spray or coat with butter a glass pan
Ingredients:
-12 large manicotti shells (maybe a few extra, they break easy)
-2 cups ricotta cheese
-4 cups shredded mozzarela
-1 (26 oz.) jar of spaghetti sauce
-6 tblspns chopped bail or 2 dried
-1/2 cup grated parmesan or romano cheese
*Mix together 3 cups of the mozzarela with the ricotta and basil
*Cook pasta by box directions
*Drain, rinse and dry on paper towels
*CAREFULLY stuff the shells
*Spoon enough spaghetti sauce to fairly thickly cover the bottom of the pan
*Place the shells side by side and pour the rest of the sauce over the shells and then mozzarella on top
*Bake for 15 minutes
*Sprinkle with parmesan and bake 10 minutes longer
Manicotti isn't much to look at-jazz it up with some more sauce or cheese on top and sprinkle with something green
Or add some spinach with the ricotta for added colour and taste :)

These are so crunchy and cheesy, you don't even realise your eating tofu! A MUST for hungry vegetarians out there!
What's so great about these is that they are so low in calories and fat.

Redbook madras chickenYesterday, I spent 1 1/2 hours in a prep kitchen preparing my family meals. I prepared six servings of the following dishes and this will feed my family until the first week in October! Using the prep kitchen and freezing my meals makes it easier for me to work my crazy hours and still come home and cook (which I love to do).
