After I made corned beef for the first time ever this week, I realized that I knew absolutely nothing about it, other than the fact that it's absolutely delicious. What, exactly, makes it different from that other deli favorite, pastrami? Corned beef and pastrami are both beef cuts that have been cured and cooked.

As part of my New Years resolutions I've been eating 4 days a week no meat. Its been easier than I thought, because I still have 3 days a week that I can succumb to the bacon that is calling my name. So here is my Saturday food journal (a meat free day)
Breakfast-
1 cup Kashi Go Lean Crunch with 1/2 Almond Milk
1 medium banana
1 cup of iced green tea
Lunch-
1 1/2 cups of streamed veggies
1/2 of quinoa ( leftover from the night before)
1 piece of whole grain bread with 2 tbsp of Peanut Butter
Dinner
1/4 cup of hummus with
2 whole wheat tortilla
Snack
1 small bags of movie theater popcorn
1 medium diet coke
(this is the reason for the light dinner went out to the movie with friends)
