I've been considering making a lasagna for awhile now, but I just hadn't had the time. I've got all the ingredients, but the will to make it just wasn't there. But today, I finally got one of those days where I accomplished a multitude of things around the house, a lasagna included.

Not too long ago I posted a Saucy Lasagna Rolls recipe...
I said that I would make it soon, so I did!
Thing is, the store didn't have any tofu so my mom and I made this DELICIOUS Lasagna Bolognese instead.

Don't ask me why it's called this, because honestly, I have no idea. But I must say that it looks absolutely scrumptious and I have a feeling that this recipe could become a staple in my diet! Anything with pesto these days...

I love lasagna, but I hate making it for one reason:
The amount of time it takes. Which, of course, I never have.

SERVES 8
Ingredients
2 tablespoons plus 2 teaspoons olive oil
1 1/2 tablespoons all-purpose (plain) flour
2 garlic cloves, minced
1 cup plain soy milk (soya milk)
1 cup vegetable stock
2 green (spring) onions, including tender green tops, sliced
1/2 cup dry-packed sun-dried tomatoes, soaked in water to rehydrate, drained and chopped
10 ounces fresh cremini or shiitake mushrooms, sliced
1 shallot, minced
tablespoon chopped fresh flat-leaf (Italian) parsley
1/4 teaspoon salt
6 cups baby spinach leaves, chopped
2 cups fat-free ricotta cheese
3/4 cup grated Parmesan cheese
1 egg white
12 no-boil spinach lasagna sheets, about 7 by 3 1/2 inches
1 tablespoon chopped fresh basil
Directions
In a saucepan, heat the 2 tablespoons olive oil over medium-high heat. Whisk in the flour and cook for 1 to 2 minutes, stirring constantly. Add the garlic and continue to whisk until the garlic is fragrant, about 30 seconds.

Yield: Makes 4 servings
Ingredients
5 uncooked lasagna noodles
Nonstick cooking spray
2 cups sliced fresh mushrooms
1 cup chopped onion
1 cup chopped green bell pepper
2 cloves garlic, minced
1 can (14-1/2 ounces) diced tomatoes, drained
1 can (8 ounces) no-salt-added tomato sauce, divided
1 teaspoon chopped fresh basil or 1/4 teaspoon dried basil
1 teaspoon chopped fresh oregano or 1/4 teaspoon dried oregano leaves
1/8 teaspoon ground red pepper
1-1/2 cups low-fat (1%) cottage cheese or reduced-fat ricotta cheese
1/4 cup grated Romano or Parmesan cheese
2 egg whites
3 tablespoons fine dry bread crumbs
1/2 (10-ounce) package frozen chopped spinach, thawed and well drained*
3/4 cup (3 ounces) shredded part-skim mozzarella cheese
1/4 cup chopped fresh parsley
Preparation:
1. Prepare noodles according to package directions, omitting salt; drain. Rinse under cold water; drain.

4 lb. large Yukon gold potatoes (about 8 or 9 potatoes), peeled and cut into 1/4-inch-thick slices
1/4 cup olive oil
1/4 cup pesto
1 lb. low-fat ricotta cheese
