I just read this recipe on Dr. Weill's website and thought it sounded great. I am going to make it once I go grocery shopping next week!

1 pound jicama (about 1 large), peeled
2 large beets, trimmed and peeled
2 large carrots, peeled and cut into 3-inch lengths
2 large navel oranges
3 to 4 tablespoons freshly squeezed lime juice (about 2 to 3 limes)
2 to 3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1/4 cup unsalted peanuts, toasted and coarsely chopped
Using a mandolin or very sharp knife, julienne the jicama, beets, and carrots and combine in a large bowl.
Slice off the ends of the oranges. Using a paring knife, remove the peel and pith from the oranges, following the curve of the fruit.

This salad is great at cook out & unexpected.
Salad:
1 pound green beans trimmed
1 yellow sweet pepper, seeded & julienned
1 medium jicama peeled & julienned
15 cherry tomatoes halved
Dressing:
1 teaspoon Dijon Mustard
1/3 cup lemon juice
1 tsp chopped chives
2/3 cup olive oil
salt & pepper
Cook beans for 7-10 minutes in boiling water, drain & place in cold water to stop cooking drain.
Add jicama, pepper & tomatoes to beans in a large bowl
Whisk dressing ingredients together, pour over beans.

I decided that over Christmas that I would "adopt" a new fruit and vegetable that I haven't eaten much of, find one I liked and incorporate into my weekly diet.
These two little stars are low-calorie, packed with vitamins and flavour, and are (like most produce) not that expensive if you keep your eyes sharp.
Soo without further adieu:
The veggie is definitely celeriac (Inspired by the need to make a last-minute substitution to Christmas dinner...ending up in a "celeriac" gravy and dressing addition that worked out so awesomely..damn this stuff is good!

The Morning Glory Cafe at the Farm
In southern Phoenix there is a place called The Farm at South Mountain. It is an actual farm that grows vegetables and it is surrounded by pecan trees. You will feel a million miles away from the city!!

I don't know about anyone else out there, but working full time can take a toll on your lunch creativity. When it comes to getting up early enough to make a decent packed lunch, vs. sleeping in, i opt for more sleep.
