Okay, I seriously wasn't going to post another recipe today. I decided that I was done and should probably concentrate on getting other things accomplished - like lunch or maybe some actual work.
But, instead, my eyes came across this recipe, my jaw dropped, I started drooling, and the rest is history.

I enjoy tilapia because it's a light, flaky white fish that doesn't count you an arm and a leg like most seafood. I love seafood, but I often find that it just doesn't fit into the budget like I wish that it would. So, in this case, I squeeze it in by adding some pantry staples.

This dish is very easy and flavorful. Served with a salad, it makes a dinner (and the leftovers were pretty good, too!)
2 tsp cornstarch
1 14.5 oz can chicken broth
3 tsp lemon juice
2 tsp olive oil
1 lbs. easy peel shrimp, shelled
4 cloves garlic, minced
3 tsp fresh or 1 teaspoon dried parsley
8 oz.
