This recipe takes the Middle Eastern side dish and transforms it into a hunger-squashing main meal. This Greek side dish is a great source of vitamin K and omega-3s and with 24 grams of protein and six grams of fiber, it will shut up a rumbling stomach for hours.
Ingredients:
2/3 c medium-grind bulgur (next to the rice in most supermarkets)
1 2/3 c water
1/3 c fresh lemon juice
12 oz precooked peeled or thawed frozen shrimp, coarsely chopped
3/8 tsp black pepper
1 c diced cucumber
1 pint grape tomatoes
1/2 c chopped red onion
1/2 c chopped parsley
2 Tbsp olive oil
1/2 c (2 oz) crumbled feta cheese
1/4 tsp salt
Directions:
In a saucepan, combine bulgur, water, and 2 tablespoons lemon juice; bring to a boil.

Summer is the perfect time for quick meals that require no heat. In this delicious no-cook recipe, the smoked turkey adds protein, making for a more complete (and filling!) meal.
Ingredients:
3 cups (about 3/4 lb) diced, cooked smoked turkey breast
1 can (15.5 oz) black beans, rinsed and drained
1 1/2 cups fresh corn kernels
1 cup cherry tomatoes, halved
1 cup diced bell peppers (any colors)
1/2 cup finely chopped red onion
3 cups arugula Dressing
1/2 cup chopped fresh mint (plus leaves for garnish)
1 tbsp finely chopped garlic
1/2 cup tomato juice
2 tbsp fresh lemon juice
1 tbsp sherry (or balsamic) vinegar
1 tbsp olive oil
Directions:
Combine turkey, beans, corn, tomatoes, bell peppers and onion in a bowl.

Ingredients:
1 1/2 c brown rice
8 oz beef fillet
3 Tbsp canola oil
3 Tbsp diced shallots
3 Tbsp diced garlic
1 Tbsp fermented black beans (or black bean paste)
4 scallions, cut into 1" pieces
1 oz ginger, cut into long strips
2 c broccoli or broccolini, cut into 1" pieces
1/2 c chicken or beef stock (can substitute white wine or water)
2 Tbsp balsamic vinegar
Directions:
Cook brown rice per package directions.
Meanwhile, heat a cast-iron pan or wok over high heat.

2 Tbsp sesame seeds (optional)
1 bag (12 oz) fresh or frozen stir-fry vegetables
1 container (5 oz) fresh diced tricolor peppers
1 can (8 oz) water chestnuts, drained
5 Tbsp stir-fry sauce
1 Tbsp vegetable oil
Directions:
Prepare rice according to package directions and cover to keep warm.

1 pinch (about 1/16 tsp) sugar
4 snapper fillets (5 oz each), rinsed and patted dry
1 3/4 c medium salsa
1 can (15 oz) no-salt-added black beans, drained and rinsed
2 c chopped pineapple
Directions:
Preheat oven to 400°F and cook rice according to package instructions.
