Lately, for no reason whatsoever, I've had this incredible craving for feta. The saltiness of it just seems to satisfy me like no other food in recent days. I've been coming up with whatever meals I could lately that have feta just because I must have it!

There's nothing more comforting than a juicy meatloaf for dinner.
I love flavors that go well together, like ham and cheese, peanut butter and jelly, etc.
For savory dishes, feta and spinach is a delicious classic combination.

This recipe takes the Middle Eastern side dish and transforms it into a hunger-squashing main meal. This Greek side dish is a great source of vitamin K and omega-3s and with 24 grams of protein and six grams of fiber, it will shut up a rumbling stomach for hours.
Ingredients:
2/3 c medium-grind bulgur (next to the rice in most supermarkets)
1 2/3 c water
1/3 c fresh lemon juice
12 oz precooked peeled or thawed frozen shrimp, coarsely chopped
3/8 tsp black pepper
1 c diced cucumber
1 pint grape tomatoes
1/2 c chopped red onion
1/2 c chopped parsley
2 Tbsp olive oil
1/2 c (2 oz) crumbled feta cheese
1/4 tsp salt
Directions:
In a saucepan, combine bulgur, water, and 2 tablespoons lemon juice; bring to a boil.

Tuna and Tomato with Basil and Feta
This is what I whipped up for my lunch today.
I drained and flaked a can of tuna. I chopped up ½ of a large tomato.

I noticed a couple people putting up stuffed chicken/beef/etc recipes lately and that inspired me to go back and pull out this one. My husband and I made it for a family dinner with it pleased all 8 people! (Which in my family is next to impossible!) Absolutely delicious.

4 (4-ounce) skinned, boned
Chicken breast halves
1/4 c Dry breadcrumbs
1/4 c (1 ounce) crumbled Feta Cheese with basil and tomato
Vegetable cooking spray
1 1/2 t Margarine, melted
3 c Torn spinach
1/2 c Fresh basil
1 T Balsamic vinegar
1 t Olive oil
1/8 t Pepper
Instructions
1. Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; flatten to 1/4-inch thickness, using a meat mallet or rolling pin. Dredge chicken in breadcrumbs.

It’s that time of year (for some of us) when we start planting our garden. I love squash and zucchini but not as much as this prolific plant gives... so I end up giving it away and trying to find new recipes.

Yet another allrecipes meal that I've taken and made my own with a few alterations.
INGREDIENTS
1 1/2 teaspoons butter, softened
2 - 3 slices whole wheat bread, or your favorite bread
2 tablespoons crumbled feta cheese
1 slice Cheddar cheese
1 tablespoon chopped red (or white) onion
1/4 tomato, thinly sliced
I personally don't really like tomato, so I left that out and added a little garlic. Almost everything I cook tends to have a little garlic in it at some point!

Since I'm sitting here eating pasta with feta, I thought this was rather appropriate!
Whole-Wheat Pasta with Broccolini and Feta
From Food Network Kitchens
Total Time: 25 minutes
Makes about 4 servings
1 medium shallot, thinly sliced
1 bunch broccolini (about 10 ounces), stems cut into 2-inch stems, and florets
1 medium bunch radishes, trimmed and very thinly sliced
12 ounces whole-wheat rigatoni
1 tablespoon sherry wine vinegar
1/2 teaspoon finely grated orange zest
3/4 teaspoon kosher salt, plus more as needed
Freshly ground black pepper
3 tablespoons extra-virgin olive oil
7 ounces feta cheese, crumbled
Directions
Put the shallots in a bowl and cover with cold water. Soak for about 10 minutes; drain.

I saw Ellie Krieger make something very similar on Food Network and we re-vamped the recipe a little bit tonight. It was DELICIOUS.
