I'm of German descent, and my mother always served either Klosse (Potato Dumplings) or the fried version, Reiberdatschi (Potato Pancakes) with nearly every meal. Now that I've become more health conscious, I have found a way to duplicate the taste of Reiberdatschi without all the saturated fat. I like to serve these Baked Potato Pancakes as a side dish to any type of roast.

2 tablespoons all-purpose flour
2 teaspoons ground cloves
2 teaspoons ground cinnamon

The other night my boyfriend whipped up some hearty carrot-thyme soup topped with sour cream. He served it alongside pork chops with apple-potato pancakes and raspberry relish. I created an apple-bourbon cocktail with a cinnamon-sugar rim to wash it down.
