Try this delicious appetizer! Just add a little meat to your Bruschetta.

Ingredients:
2 tomatoes, seeded and chopped (about 1 lb.)
1/3 cup chopped onions
1/4 cup chopped basil

Just recently I ate bruschetta with goat cheese, hazelnuts, cashews, grilled onions tomatoes and, I believe, raisins. So much better than the traditional bruschetta of mozzarella and tomatoes! I think I will have to give this a try for my next party!

Try this delicious tomato-artichoke mixture. This also makes a delicious pasta sauce.
Serves: 4; Prep Time: 7 minutes; Cook Time: 2 minutes
Ingredients:
2 ripe plum tomatoes
1 clove garlic
1 cup frozen artichoke hearts, thawed and drained
½ cup chopped fresh parsley
¼ cup chopped toasted walnuts
½ lemon, juiced and zested
¼ cup plus 1 teaspoon extra-virgin olive oil
¼ cup freshly grated Parmesan
Salt and freshly ground black pepper, to taste
4 thick slices ciabatta or peasant loaf
Directions:
Preheat the broiler.

Bruschetta is quickly becoming one of our favorite snacks on a cold day. The oven warms up the house and the bruschetta is just so tasty. Super easy, too.

This recipe comes straight from the halls of Kraft and right off of my grill and I must say, absolutely delicious. And I'm sure that if you don't want to be grilling this time of year that using a skillet would be just fine. After all, it'll still have these delicious flavors!

Here's another dish that a friend of mine brought to our potluck last weekend. This is courtesy of my friend Jay.
8 plum tomatoes
1/2 small yellow onion
8 basil leaves
1/3 cup olive oil
1 clove garlic or 1 teaspoon minced garlic
1/3 teaspoon oregano
Dash of salt
Dash of pepper
Cut tomatoes in half and scoop out seeds and inside.

If you've had a challenging morning at work, a good lunch can certainly lift your spirits and inspire you to carry on. For some, though, the motivation to prepare such a meal is hard to stir up, particularly at times when relaxing is what you want to do.
It's understandable that after a long day at the office, preparing and eating supper and getting things tidied up, the last thing many people want to do is think about what to make for lunch the next day.
