How Pink Can My Pork Be?

Last night my hubby cooked a pork loin roast - I love when he cooks me dinner. The recipe said to cook the meat until the internal temperature registers 140 to 145°F, and while the meat rests the temperature will rise another five to 10 degrees. He did this, and the pork was pink running with pink juices. We were both alarmed that it seemed quite underdone, but it seems that attitudes about pork have changed.

The Center For Disease Control still recommends cooking pork to at least 170°F and until the juices run clear to avoid trichinosis, a parasitic infection caused by undercooked meat. This conflicts with the USDA recommendation of cooking pork to 160°F. While trichinosis was once common, only an average of 12 cases are reported annually, which is considerably smaller than the 40,000 cases of salmonella reported every year to the CDC. Trichinosis has declined since feeding raw meat to hogs was outlawed; the trichina worms that cause the food-borne illness make their home in raw meat and if ingested through undercooked meat they can make their home in your gut. With the significant decrease in infection, pork should at least be cooked to a temperature that will kill E. coli, which is 160°F. Along with being safer, pork meat is now leaner, so it dries out when cooked at higher temps. Some chefs say 145°F is high enough for cuts of pork. What about you? How do you cook your pork?

The Leanest Cuts of Meats Revealed

Sick of chicken yet? You're not alone, but how does someone who's trying to watch her calories and fat intake pick a lean type of meat? I found a basic breakdown on the leanest meat choices on Yahoo and I thought it would be helpful in deciding which meat meets your needs. Here are the highlights:

Bison: We hope you’re ready to expand your dinner horizons because bison (aka buffalo) is the big winner. (Deer and elk are right on its hooves, er, heels.) Believe it or not, bison has slightly less fat and fewer calories (2 grams and 122 calories per 3-ounce serving) than skinless light meat chicken (3g and 144 cals). Plus, it’s a terrific source of protein (24g) and iron. The taste? Similar to beef, though slightly sweeter and richer.

Bonus: With bison (wild game, too), you aren't exposed to the cancer-linked growth hormones and antibiotics administered to farm-raised cows.

Beef and Veal: Beef and veal are skinniest when they’re loin or round cuts, such as beef bottom sirloin (6g fat, 150 cals) and top round veal (3g, 128 cals). Avoid veal cutlets and breast meat.

Pork: Choose leg cuts, such as ham, or loin, as in boneless sirloin pork chops or top loin chops (both have about 7g fat and 170 cals).

Lamb: Try cuts from the shank half of the leg (if labels aren’t clear, ask the butcher). Well-trimmed shank-half cuts have 5-6 grams fat and about 155 calories per serving.

Fit's Tip: Meat is generally higher in cholesterol and saturated fat than chicken, fish or vegetables, so use the choices above for those times when you just need some red meat.

Insulin Pork Regular (IN-su-lin pork REG-yoo-lar)

Treats diabetes mellitus.

Brand Name(s)

There may be other brand names for this medicine.

When This Medicine Should Not Be Used

You should not use this medicine if you have had an allergic reaction to any type of insulin or to products made from pigs.

How to Use This Medicine

Injectable

Your doctor will tell you how much of this medicine to use and how often. Your dose may need to be changed several times in order to find out what works best for you. Do not use more medicine or use it more often than your doctor tells you to.

Your doctor will prescribe your exact dose and tell you how often it should be given. This medicine is given as a shot under your skin.

Check the carton and the bottle label for the name and letter designation of the insulin you receive to make sure it is the same as that your doctor prescribed. Do not change the brand or dose of your insulin unless your doctor tells you to.

Always observe the bottle of your insulin before every use. Do not use the medicine if it appears cloudy, slightly colored, or if it contains solid particles.

You may be taught how to give your medicine at home. Make sure you understand all instructions before giving yourself an injection. Do not use more medicine or use it more often than your doctor tells you to.

This medicine comes with patient instructions. Read and follow these instructions carefully. Ask your doctor or pharmacist if you have any questions.

You will be shown the body areas where this shot can be given. Use a different body area each time you give yourself a shot. Keep track of where you give each shot to make sure you rotate body areas.

Use only syringes that are specially made for insulin. It is best to use always the same brand and same type of syringe. Some types of insulin must be used with a certain type of syringe. Ask your pharmacist if you are not sure of which one to use.

Use a new needle and syringe each time you inject your medicine.

If you are using a reusable syringe, you must sterilize it before each dose. Follow the sterilizing directions that come with your syringes. Never share your needles and syringes with any one.

Carefully follow your doctor's instructions about any special diet.

Your doctor may suggest that you follow an exercise program. You may also be taught to check your own blood sugar levels at home. Diet, exercise, medicine, and checking your blood sugar are all important to control your diabetes.

If a dose is missed:

Call your doctor or pharmacist for instructions.

How to Store and Dispose of This Medicine

Store this medicine in the refrigerator. Do not freeze. If you cannot refrigerate keep it in a cool place away from heat or sunlight.

Throw away used needles in a hard, closed container that the needles cannot poke through. Keep this container away from children and pets.

Ask your pharmacist, doctor, or health caregiver about the best way to dispose of any leftover medicine, containers, and other supplies. You will also need to throw away old medicine after the expiration date has passed.

Keep all medicine away from children and never share your medicine with anyone.

Drugs and Foods to Avoid

Ask your doctor or pharmacist before using any other medicine, including over-the-counter medicines, vitamins, and herbal products.

Make sure your doctor knows if you are using steroid medicine such as dexamethasone, prednisolone, prednisone, or Medrol®. Tell your doctor if you are using diabetes medicine that you take by mouth such as glyburide, metformin, Actos®, Glucophage®, or Glucotrol®.

Make sure your doctor knows if you are using birth control pills, salicylates (such as aspirin). Tell your doctor if you are using sulfa drugs (such as trimethoprim/sulfamethoxazole, Bactrim®, Cotrim®, or Septra®). Tell your doctor if you are using medicine for thyroid gland disease.

Make sure your doctor knows if you are also using beta blocker such as atenolol (Tenormin®), metoprolol (Lopressor®), or propranolol (Inderal®).
Make sure your doctor knows if you are pregnant or if you are planning to become pregnant. Tell your doctor if you are breast feeding.

Make sure your doctor knows if you have kidney disease, liver disease, or thyroid disease. Tell your doctor about all other medical problems you have before using this medicine.

Your doctor will need to check your progress at regular visits while you are using this medicine. Be sure to keep all appointments.

Your doctor will need to check your blood or urine at regular visits while you are using this medicine. Be sure to keep all appointments.

If your blood sugar gets too low, you may feel weak, drowsy, confused, anxious, or very hungry. You may also sweat, shake, or have blurred vision, a fast heartbeat, or a headache that will not go away. If you have symptoms of low blood sugar (hypoglycemia), check your blood sugar. If your blood sugar is 70 mg/dL (milligrams per deciliter) or below, do one of the following: Drink 4 ounces (one-half cup) of fruit juice, or eat 5 to 6 pieces of hard candy, or take 2 to 3 glucose tablets. Re-check your blood sugar 15 minutes later. If your blood sugar is above 70 mg/dL, eat a snack or a meal. If your blood sugar is still below 70 mg/dL, drink one-half cup juice, or eat 5 to 6 pieces of candy, or take 2 to 3 glucose tablets. Carry candy or some type of sugar with you at all times, especially if you are away from home. You can take this if you feel that your blood sugar is too low, even if you do not have a blood glucose meter. Always carefully follow your doctor's instructions about how to treat your low blood sugar. Learn what to do if your blood sugar gets too low. Teach friends, co-workers, and family members what they can do to help if you have low blood sugar.

Always keep an extra supply of insulin as well as a spare syringe and needle on hand. Always wear diabetic identification so that appropriate treatment can be given if complications occur away from home.

Your dose of insulin may change slightly with changes in your diet or physical activity. Your dose needs may also change while you are ill, pregnant, traveling, taking a new medicine, or exercising more than usual. Follow your doctor's instructions about making any changes in your insulin dose.

Possible Side Effects While Using This Medicine

Allergic reaction: Itching or hives, swelling in your face or hands, swelling or tingling in your mouth or throat, chest tightness, trouble breathing.

Treats diabetes mellitus.

Brand Name(s)

There may be other brand names for this medicine.

When This Medicine Should Not Be Used

You should not use this medicine if you have had an allergic reaction to any type of insulin.

How to Use This Medicine

Injectable

Your doctor will prescribe your exact dose and tell you how often it should be given. This medicine is given as a shot under your skin.

Use only the brand of this medicine that your doctor prescribed. Different brands may not work the same way.

This medicine is to be taken by using special syringes. Your doctor will tell you which type and brand of syringe to use. Do not share your needles or syringes with others.

Use a new needle and syringe each time you inject your medicine.

If you are using reusable syringes and needles, you must sterilize them before reusing. Follow the sterilizing directions given with your syringes.

If you cannot refrigerate, keep it in a cool place away from heat or sunlight.

Make sure your doctor knows if you are also using a beta blocker such as atenolol (Tenormin®), metoprolol (Lopressor®), or propranolol (Inderal®).

There are many other medicines that interact with this medicine. Make sure your doctor knows all other medicines you are using.

Do not drink alcohol while you are using this medicine.

Here are some shared by fellow FitSugar readers.

"Avocado instead of mayo . . . sure it may have fat in it but it's healthy fat and tastes delicious. Hummus instead of cream in sauces and soups . . . adds a ton of flavor and protein." - mamasitamalita

"I use balsamic vinegar (not vinaigrette) on my salads without any oil. It gives the same powerful flavor kick but for a lot less calories." - laellavita

"Replace ranch dressing on my salad with cottage cheese." - genipher85

For more great ideas, keep reading

Blake Lively Doesn't Mind a Pre-Booty-Shorts Burrito

It appears that Serena van der Woodsen isn't the only one with a carefree attitude. Blake Lively's Gossip Girl character gives off a see-if-I-care air that the actress apparently adopts regarding the food she eats and when.

Blake spills the beans about her lack of willpower when it comes to monitoring her diet in the August issue of UK Glamour and said, "I had to do a scene in a bra and shorts for the first time in two years. On the day of the shoot, I ate a pork burrito, chips, and coke. Afterwards, I thought, 'I probably shouldn't have done that.' But whatever." The slender actress doesn't turn to exercise to work off the food she loves; in fact, she admits, "I have never worked out."

At 21 years old, Blake's metabolism is still working to her advantage, but thankfully she's talking about getting into exercise. She plans on getting a trainer because, she says, working out makes you "feel better." It doesn't seem like Blake needs any help with her self-confidence, but regular exercise is an important part of being a healthy person. Plus, she'll be able to eat those pork burritos for more years to come.

Swine Flu Update

On Sunday afternoon, Janet Napolitano declared a public health emergency due to the swine flu. While the declaration might seem extreme, it allows preparations to begin so the country will be ready if there is indeed a full-fledged outbreak or pandemic. In a speech on Monday, President Obama tried to allay growing fears by saying, “This is, obviously, a cause for concern and requires a heightened state of alert. But it’s not a cause for alarm.”

Here are a few more details about the virus, and how it is spreading.

This swine flu virus has killed up to 149 people in Mexico. What makes this new strain of the virus particularly worrisome is that it is killing healthy young adults, which is atypical in influenza outbreaks. Mexican authorities have urged people to wear surgical masks in public.

To see the number of cases in the states and if you should travel to Mexico, read more.

According to the CDC, there 64 lab confirmed cases in the US. Here's the rundown by state: California - 10, Kansas - 2, New York - 45, Ohio - 1, Texas - 6. So far, there are no deaths from swine flu in the US.

On the international front, the World Health Organization has reported cases in Spain, Great Britain, New Zealand, Israel, Canada, and France. The WHO has also raised their state of pandemic alert to level 4.

Have tickets to Mexico? The US State Department has issued a "travel alert" advising people to avoid all "nonessential" travel to Mexico for the next three months.

The WHO also stated that there is also no risk of infection from this virus from consumption of well-cooked pork and pork products. But they do advise people to wash hands thoroughly with soap and water on a regular basis.

Now, check out what Jon Stewart has to say about the media fever around swine flu.

Update: As of Friday, 5/1, there are 141 cases reported in the US with one death. The WHO is reporting 11 countries have confirmed cases of swine flu and they have raised their alert to level 5.

Source
