5 Things: Eggs

The incredible edible egg! After a couple of decades of being considered not so good for you, eggs have definitely made a healthy comeback. A few questions still linger about the impact eggs have on cholesterol levels, so here are 5 things about eggs to answers some of those concerns.

Eating 1 egg a day does NOT increase a healthy person's risk of of heart disease or stroke, according to a study funded by the National Institutes of Health.

1 large egg contains 92 calories, 7g of fat, 210 mg of cholesterol, 94mg of sodium, .4g of carbs, .4g of sugars, and 6.3g of protein.

1 egg white contains no cholesterol and 1 egg yolk contains 210mg. If you don't have any problems with your cholesterol levels, you can eat up to 7 yolks in 1 week.

Egg yolks contain most of the egg's nutrients. 1 yolk has 21.9mg of calcium, 245 IU of Vitamin A, 18 IU of vitamin D, 66.3 mg of phosphorus, and 24.8 mcg of folate.

Most of the fat is found in the yolk, and if you are eating Omega-3 fatty acid fortified eggs, you've got to eat the yolk in order to get your fill of this healthy fat.

So, did you have an egg for breakfast? Let me know in the comments section below.

Egg White Vs. Egg Yolk: Which Is Better?

You may be throwing away the yolks to cut calories and reduce cholesterol, which is fine but did you know that most of an egg's nutrients are found in the yolk? Take a look at the comparison below to see what you may be missing.

Want to see how an egg white and yolk compare head-to-head? Then

Moral of the story: Think about keeping (and eating) a few yolks every once in a while -- If you don't currently have cholesterol problems, you can eat up to seven yolks a week. You can get even more detailed info, such as how much Methionine are in a white and yolk, at the USDA Nutrient Database.

Fit's Tip: If you are spending extra dough on Omega-3 eggs, then be sure to eat the yolks because that is where the Omega-3s are found.

6 Things to Do With Scallions

Ever buy a bunch of herbs for a recipe, only to use a scant stem and find the rest wilted with dehydration a week later? This has admittedly been a long-standing problem in my kitchen, and I've been determined to cultivate a solution for it. This week I'm addressing an aromatic I have a chronic problem forgetting about: scallions.

When they're fresh, green onions have a biting smell and are resilient to the touch, but days later, the exact same stalks will take on a muted brownish hue, made slimy thanks to dehydration, and hunched over in sadness and neglect.

Since they age quickly, the key is to make sure you use them up before they get to such a sorry state! Thankfully, there are plenty of ways to do that; scallions have a mild pungency that's versatile enough to go into just about every savory dish. A few examples:

Slice green onions as thinly as possible, then toss a handful into a garden salad.

Make a four-ingredient ginger scallion sauce to drizzle on eggs, chicken, and fish.

For four more suggestions, keep reading.

Nackadish - that's how you say it - is a small town we drive through on our way north to visit Alexandria or Oklahoma, and it's where Steel Magnolias was filmed, and it's famous for these little pies. It's a beautiful little place, with a picturesque riverfront lined with shops and restaurants that have their own sort of French Quarter-ish wrought iron balconies (remember the Easter scene where Jackson slapped Ouiser? That's the riverfront!). But you don't have to go into the actual town to get yourself some meat pies; just stop at any gas station right off I-10. They all fry them up and they're all pretty wonderful.

Tied with a festive pink ribbon and a little love, I’m hoping these cookies will be perfect for Valentine's Day. The whole-grain oats, nuts, and cherries in these cookies add heartiness, while the melted dark-chocolate chunks deliver bursts of richness. The chia seeds pack a nutty punch, and they are rich in fiber and omega-3s, too - perfect for supporting vibrant hair and skin during these cold weeks of February.

A Doctor Dishes: Which "Superfoods" Are Worth the Cost?

Most people you speak to these days are trying to stretch every dollar as far as possible - even the ones they spend buying apples and oranges.

Food prices are expected to increase yet again this year, and food manufacturers are making portions smaller without reducing prices. Not surprisingly, a recent Rasmussen poll found that 93 percent of adults report paying more for groceries now than they did a year ago.

So how can we supercharge our grocery dollars and get them to do overtime for us?

Yes, some foods are obviously a better nutritional deal than others (think apples vs. potato chips), but there’s another class of foods that blows the rest of the field away in terms of nutrients and health-protecting qualities: superfoods.

Superfoods can help prevent diabetes and heart disease, repair damage to your body’s cells, and more. But before you go piling them into your cart, know that some superfoods are better nutritional bargains than others. As a doctor and a mom, I’ve sleuthed out which ones are worth the extra cost in terms of their long-term health benefits. Below is the scoop on which ones may help you age better, ward off cancer, and more.

What to Know Before Buying Superfoods

Before we dive into what to buy, there are a few important things to remember about consuming these foods:

Eating foods fresh and in their natural state, especially fruits and vegetables (rather than in pill or powder supplement form), usually allows us to absorb the greatest amount of their nutrients. The way a superfood is processed or cooked can significantly lower its antioxidant content.

If the superfood can’t be eaten fresh, look for easy and appetizing recipes containing it. No matter how “super” a superfood may be, if you don’t know how to cook it, you’ll probably let it go to waste.

Are Superfoods "Good Buys" If I’m Shopping on a Budget?

Read on to find out.

Perhaps it's the rainbow of cheerful hues, the adorable two-bite size, or - most likely - the perfect crisp-chewy texture, but I just can't get enough of French macarons. Even when I'm stuffed to the gills, I can always make room for these tiny, delicate pastries.

True, macarons can be temperamental (meringue is the capricious culprit), but they do respond wonderfully to patience, encouragement, and a loving touch. So before you dismiss the idea of making these little lovelies at home, we've found a basic recipe that breaks down the uncooperative veneer of the elusive macaron.

Although part of the same happy pastry family, the French macaron should not be confused with the coconut macaroon. They are similar in concept, but differ greatly in execution: while both entail adding dry ingredients to a delicate egg white meringue, the one "o" macaron uses finely ground almonds as its base and requires much more gentle handling.

Much like a first date, there's a good chance that your first batch could end awkwardly. As in love, you simply pick yourself up and try again. Once you begin to understand the macaron's nature - its singular texture, its response to your oven, its personality in your climate - suddenly it's like the realization that you both enjoy the same rom-com movies and takeout Chinese: everything just works.
