With Teen Obesity, Inactivity Is Only Part of the Problem

I panic every time I see another "exercise doesn't work!" story - until I read between the lines and learn once again that exercise is a good thing. On the heels of its conversation-starting cover story on the exercise "myth," Time is tackling a new study of teen obesity that claims inactivity is only partly to blame for heavier kids.

Obesity rates in teenagers have triple between 1976 and 2004, with lack of exercise the suspected culprit. But a new report published in Obesity Reviews says that physical activity levels among teens have actually stayed fairly steady. So does that mean that exercise doesn't matter? Hardly, so read more.

Unfortunately, this latest study only looked at activity levels, not eating habits, and the participants were self-reporting on their own habits, which can lead to unreliable data. These figures merely suggest that the increase in teen obesity can't be explained away by teens' lack of exercise, according to Dr. Youfa Wang, the lead author of the study. Here's more:

So does this mean that exercise isn't important in controlling weight? As tempting as that conclusion might be, Wang and other health experts say that's not exactly what the new data show. . . . While exercise may not contribute directly to weight loss, it is critical for maintaining a healthy weight, since it helps calibrate the balance between energy taken in and energy burned off. "The data is too gross, and too general, to assume that [exercise doesn't count]," warns Dr. Janet Walberg Rankin, a professor in the department of human nutrition, foods, and exercise at Virginia Tech. "We need to have a dual approach to weight involving both activity and diet. I would hate for people to take away from this study that activity has nothing to do with weight."

Phew! Thanks, doc. I also hope that's not what people take away from this study. In fact, to me, it says the opposite. If teen obesity is going up because teens have increased their calorie intake without increasing their activity levels, then that seems to say pretty clearly that exercise does make a difference. Do you agree?

The Lowdown on Detox Products

Stepping on the heels of yesterday's news that Gwyneth Paltrow is, yet again, doing a New Year's detox, there's a report claiming that products promoted as detoxifying agents lack meaningful evidence. The Oxford English Dictionary defines detox as the removal of toxic substances or qualities, yet none of the 15 products tested by members of the Voice of Young Science network met the requirements of that definition.

The group investigated various products with detox labels, like bottled water, shampoo, detox patches, and vitamins, and challenged the detox claims made by the companies behind these products. According to BBC News, the scientists said, "In the majority of cases, producers and retailers were forced to admit that they had simply renamed processes like cleaning or brushing, as detox."

The researchers identified detox products as a waste of money and said, "Anyone worried about the aftereffects of Christmas overindulgence would get the same benefits from eating healthily and getting plenty of sleep." My thoughts, exactly.

Reality Check: What's the Deal With Fergie's Vinegar Shots?

In a recent Glamour interview, Fergie Ferg revealed that one of her diet tricks is shots of organic apple cider, unfiltered. She said:

"Two tablespoons. For some reason I've noticed a difference on my stomach. I just trusted [my trainer] on this one. I'm sharing. I'm all about sharing secrets."

Does anyone else smell a magic bullet? Now, I have read that drinking apple cider vinegar (ACV) can help with many ailments, but never weight loss, so I decided to do a little investigation. To see what I found out just read more.

Basically what I found out is that there is very little evidence in the ACV for weight loss category, with little scientific backing whatsoever. WebMD does speculate that white vinegar (and perhaps other types) might help people feel full, but this was the results of a test on only 12 people. Remembering a quote I love from Dr. Andrew Weil about ACV, I decided to see what his expert opinion is on the whole matter. He said:

"There is absolutely no scientific evidence showing that apple cider vinegar can aid in weight loss or that it contains any magic ingredients that help you to shed pounds. Back in the 1970s when this diet took its place among the many weight loss fads and scams, proponents claimed that somehow a combination of apple cider, kelp, vitamin B-6, and lecithin fooled the body's metabolism into burning fat faster than it would normally.

These days the claims are far less elaborate - supposedly, all you need to do to lose weight is to take one, two, or three teaspoons of apple cider vinegar before every meal, starting with one teaspoon and then working up to two or three. I understand that taking more than three teaspoons isn't supposed to lead to better results. The only dieting advice you get with this 'diet' is to eat moderate portions at meals, avoid snacking, and wait for the apple cider vinegar to reduce your hunger and food cravings."

So there you have it. If you're looking to lose weight, I know it seems easy to say, "Fergie looks great and all she does is take two tablespoons of ACV," but I'm willing to bet my left arm that she works out and eats right and did not get that body from ACV. The formula for weight loss, once again, is healthy eating and daily exercise.

Source

Diet Tip: Put Protein on Your Plate

Fat is an often misunderstood part of the dieter's diet. For many years it was treated as fact that fat kept people feeling fuller for longer. While some fats do have redeemable features, this is not one of them.

New research shows this not to be the case with fat. While fat does take longer to digest, it does not help control appetites because fat is the least satiating food group. The foods most likely to keep hunger at bay are protein, followed by carbohydrates, then finally fats. It is always best to create a well-balanced meal that contains all these food groups, and you can go extra light on the fat portion without suffering hunger pangs.

Make sure you include protein with every meal if you are looking to keep your tummy from grumbling.

You'll Never Miss the Meat: Conscious Cook Cookbook

We know that eating less meat is a good thing - it reduces your carbon footprint, lowers your grocery bill, and makes sense for your heart. But does it taste good? Vegetarian diets are often associated with a bland menu of tofu, sprouts, and brown rice day after day. Chef to the stars Tal Ronnen sets out to bust this myth in his new cookbook, The Conscious Cook - Delicious Meatless Recipes That Will Change the Way You Eat ($20).

The cookbook is divided into sections by meal courses that include starters, soups, entrées, and desserts. I'm most excited about the entire section devoted to sandwiches because of all the new lunches I get to try. There's a nice intro that covers Ronnen's must haves in the kitchen - from what items he always has in his pantry (agave nectar) to the chef tools he can't live without (food processor). Ronnen touches on the importance of a vegan diet but does it without making you feel like you're choking on someone else's politics. It's obvious the chef's main focus is making food that tastes exceptional.

To hear more about The Conscious Cook and see a killer quinoa recipe, read more.

Each of the 75 recipes features a protein and ranges from the comforting - free-form ravioli with tofu ricotta and arugula pesto - to the sophisticated - peppercorn-encrusted portobello fillets with yellow tomato bearnaise and mashed potatoes. And every recipe has an inspiring photo accompanying it.

What's great about this cookbook is its range and its approach to meatless cooking. No main dish ever feels like a side dish, which can happen a lot in vegan and vegetarian cooking. Instead, each meal is made to be complete and satisfying. There are recipes for a quick or casual meal, but if you want to pull out all the stops, there are recipes for that too. As an added nice touch, there are seasonally driven dinner menus included at the end.

Quinoa, Avocado, and Sweet Potato Timbale With Roasted Tomatillo Dressing
The Conscious Cook: Delicious Meatless Recipes That Will Change the Way You Eat

Ingredients

For the quinoa:
1 cup quinoa, cooked in vegetable stock according to the package directions and cooled to room temperature
1/2 jalapeno, minced
1 tablespoon minced fresh cilantro
1 tablespoon extra-virgin olive oil
Juice of 1 lime
Salt and freshly ground pepper to taste

For the sweet potatoes:
1 sweet potato, peeled and cut into 1/2-inch dice
2 teaspoons extra-virgin olive oil
Sea salt and freshly ground pepper

For the dressing:
2 tomatillos in olive oil, skins removed
3 tablespoons plus 1 teaspoon olive oil
1 tablespoon rice vinegar
1/4 cup chopped cilantro
1 teaspoon light agave nectar
Sea salt and freshly ground pepper

For the tortilla strips:
Canola oil
2 corn tortillas, cut into 1/4-inch strips
1 teaspoon Cajun seasoning

To serve:
2 avocados, diced
Microgreens

You'll also need 4 salad plates, a food processor, and a 3-inch ring mold.

Directions
1. Make the quinoa: Place all the of the quinoa ingredients in a medium bowl and toss to combine.
2. Make the sweet potatoes: Preheat the oven to 400 degrees. In a small bowl, toss the sweet potatoes with the oil, and season with salt and pepper to taste. Spread in a single layer on a baking sheet and roast for 15 minutes, or until soft in the middle and lightly browned. Be careful not to let the sweet potatoes burn.
3. Make the dressing: Lower the oven temperature to 350 degrees. In a small bowl, toss the tomatillos with 1 teaspoon of the oil. Place on a baking sheet and roast for 15 minutes. Transfer to a food processor, add vinegar, cilantro, and agave nectar, and pulse to combine. With the motor running, pour in the remaining 3 tablespoons oil in a thin stream. Continue blending until emulsified. Season with salt and pepper to taste.
4. Make the tortilla strips: Pour 2 inches of oil into a small, heavy pot and heat until the oil shimmers. Add the tortilla strips and fry until crisp and browned, 1 to 2 minutes. Drain on paper towels and sprinkle with the Cajun seasoning.
5. Assemble the salads: Place a 3-inch ring mold in the center of one of the 4 salad plates. Fill with 1/4 of the quinoa mixture and press down with a spoon to pack the mold, smoothing the top. Place 1/4 of the sweet potato pieces on top of the quinoa and press down gently. Top with 1/4 of the avocado and press down gently. Carefully remove the mold. Repeat on the remaining salad plates.
6. Carefully place 2 tortilla strips parallel to each other about 1 inch apart on top of each timbale. Place 2 more tortilla strips perpendicular on top of those. Top the timbales with the microgreens and drizzle the dressing around the timbales.

Makes 4 servings
Prep time: 45 minutes

 HEALTH GUIDE REFERENCE FROM A.D.A.M

Definition

There is a connection between food consumption and athletic performance.

Function

There is a large body of evidence showing a relationship between food consumption and athletic performance.

A poor diet will almost certainly have a negative effect on the performance of even the most casual athlete.

A good diet with adequate calories, vitamins, minerals, and protein will help provide the energy required to finish a race or simply enjoy a recreational sport or activity.

Recommendations

The diet recommended for an athlete differs little from the diet suggested for any healthy individual. The food guide pyramid is an excellent resource. However, the amount of each food group needed will depend on the type of sport, the amount of training and the time in relation to activity or exercise. Calorie needs vary with the size, age, sex and physical activity performed by the individual so the number of servings a person requires will vary.

CARBOHYDRATES

Complex carbohydrates are a diet staple. They are found in foods such as pasta, bagels, whole grain breads and rice. They provide energy, fiber, vitamins, and minerals and are low in fat. Carbohydrate loading (a concerted diet/training regimen) will increase the body's energy stores of a carbohydrate called glycogen. Carbohydrate loading has been shown to improve performance in endurance-type activities lasting more than 1 hour.

The classical method of carbohydrate loading has been abandoned and replaced by a modified method which is safer and equally effective at increasing muscle glycogen. The most important factor influencing glycogen stores is to consume 50 - 60% of calories from carbohydrates on a daily basis.

Simple sugars such as soft drinks, jams and jellies, and candy provide few nutrients but a lot of calories. They may actually decrease performance when consumed directly before an athletic event as they may cause hypoglycemia.

PROTEIN

Protein's most important functions in the body are to support growth and to repair body tissues. Many people feel athletes need a high-protein diet to support muscle growth despite the fact that researchers have repeatedly proved this false.

It is also a myth that a high-protein diet will promote muscle growth. Only strength training and exercise will promote changes in muscle. Athletes, even body builders, require only small increases over normal needs in order to support muscle growth. Athletes easily meet this increased need by simply consuming more total calories (eating more food).

Americans already eat almost twice as much protein as they need, so protein needs for muscle development are being met before strength training begins. Excess protein is used as energy and can be stored as body fat.

Amino acid supplements and excessively high intakes of protein are not recommended. They can increase calcium loss and put an added burden on the kidneys, which must remove the excess nitrogen protein provides.

WATER AND FLUID

Water is the most important, yet over-looked, nutrient by athletes. Water and fluids are essential to maintaining good hydration and body temperature. Sweat losses to keep the body cool can exceed several liters in a 1-hour period.

Adolescents and adults should replace any lost body weight lost during a exercise with equal amounts of fluids. A good sign that you have fully rehydrated is to check to see if your urine is clear. Cool water is the best choice.

Some suggestions for maintaining adequate hydration include:

Drink plenty of water, juice, and milk.

Avoid caffeine -containing beverages. Caffeine is a diuretic and promotes fluid loss.

Drink plenty of fluid before, during, and after exercise.

Offer children water frequently during sports activities. They do not respond to thirst as readily as adults.

ACHIEVING DESIRED WEIGHTS FOR COMPETITIVE PURPOSES

Changing body weight to improve performance must be done safely and effectively or it may do more harm than good. Maintaining an unrealistically low body weight, rapid weight loss, and unnaturally suppressing weight gain can have negative health effects so it is important to set realistic body weight goals.

Young athletes attempting to lose weight will benefit from a consultation with a registered dietitian. Eating disorders and poor dietary habits may result from experimentation with diets.

Make sure that you speak with a health care professional to discuss a diet appropriate for your sport, age, gender, and amount of training.
