Corn Oil vs. Canola Oil

Since Hanukkah is coming up on Dec. 4, I thought it'd be a great idea to chat about oil. When you look on a shelf at the store, there are many kinds of oil to choose from, and I always thought that canola and corn oil were the same thing. I was way off.

Corn oil is made from the germ of corn. Canola oil is actually produced from rapeseed oil and was originally made in Canada. The word canola comes from "Canadian Oil, Low Acid." Some people think that canola oil is unhealthy because rapeseed oil contains high amounts of erucic acid, which is know to have harmful effects. Don't worry though, canola oil is now made from a new plant that is similar to the rapeseed plant, but has a much lower erucic acid content.

So how do they compare nutritionally? To see the chart

As you can see, canola oil is so great because like olive oil, it's low in saturated fat and high in monounsaturated fat. This kind of fat is good to consume because it can actually lower LDL (bad) cholesterol and maintain HDL (good) cholesterol. Another thing, corn oil contains more polyunsaturated fat than canola oil. This type of fat has also been shown to reduce levels of LDL (bad) cholesterol, but too much can lower your HDL (good) cholesterol.

Fit's Tips: Canola oil is a great choice when it comes to baking and sautéing, because it has a high burn point, meaning it doesn't start smoking until it reaches 238°Celsius. Just for reference, olive oil's burn point is 190°Celsius.

A Veggie-Filled Indoor Picnic

A sandwich of asparagus and mushrooms could be kind of dull - or, as Between the Bread demonstrates, it could be a triumphant lesson in culinary restraint.

Ann Arbor's famed Zingerman's Deli is known for its corned beef sandwiches, but it's also not shy when it comes to packing on farmers market fresh veggies.

This recipe, dubbed Rodger's Big Picnic, comes from my trusty Roadfood Sandwiches cookbook, which describes this sandwich as Zingerman's ode to Michigan produce and particularly asparagus.

Putting this recipe together, I worried it would be too dull. The mushrooms are just broiled, not marinated, and the sandwich is adorned with nothing but sharp cheddar and Dijon mustard.

But with perfectly cooked, totally fresh produce, two ingredients are all you need. The sandwich was unexpectedly graceful, simple yet full-bodied, and hard to put down.

A First Ladylike Grilled Chicken Salad With Herb Vinaigrette

Michelle Obama exudes elegance, so it's no surprise that her recipe for chicken salad with herb vinaigrette is simple and sophisticated too. In honor of the First Lady's first cookbook, American Grown, coming out on May 29, I whipped up this easy and healthy dinner salad.

This salad celebrates Summer greens, herbs, and grilling season, though if you don't have a grill, the chicken is just as delicious if you cook it in a broiler, like I did. The grill-laden marinade and sherry vinaigrette complement each other for a fresh flavor that requires little adornments. To marinate the chicken, just mix up the lemon zest, herbs, and enough olive oil to coat. I only marinated mine for about 20 minutes and that was plenty to create a flavorful, golden browned breast.

I also served the chicken a second night atop a salad with fresh corn and avocado, and it was still a standout. Considering how extraordinary fast and easy this recipe was, I'll definitely be making it again. Get the recipe now.

What We're Sweet On: The Gloss That Looks Good on Everyone

Some lip glosses are so waxy, your lips feel as if they're suffocating, while others are so shiny, they practically blind the person standing next to you. Such is not the case with Intelligent Nutrients' Lip Delivery Antioxidant Gloss in Pink Hibiscus ($24). Free of synthetic waxes and oils (and fragrance and colorants), the subtly tinted gloss lends just a hint of sheen to the lips. And the touch-of-pink hue is the perfect shade to reach for when you want a more minimalistic makeup look - or when you want low-key lips to complement an intensely heavy smoky eye.

Certified organic, Lip Delivery is loaded with antioxidant-rich cranberries, purple corn, and blueberries. Beeswax, carnauba wax, and cocoa butter ingredients moisturize, while shea butter lends a bit of natural protection from the sun's UV rays. A built-in brush makes application all the more smooth, but perhaps the biggest treat is its sweet and tart flavor, a blend of caramel, vanilla, raspberry, agave, and coconut. You'll keep going back to this smooth operator again and again.
