I know oil is a huge part of the tradition, but drenching potatoes in a ton of oil isn&#039;t exactly the healthiest thing for you, so check out this recipe. It doesn&#039;t involve any deep-frying, and mixes grated carrots with sweet potatoes.&lt;/p&gt;

1 sweet potato, peeled
1 carrot or 1/2 cup of carrot matchsticks
2 eggs
3 tablespoons wheat flour
Olive or canola oil
Salt and pepper
Ketchup or applesauce&lt;p&gt;&lt;/p&gt;&lt;b&gt;Directions&lt;/b&gt;&lt;br /&gt;&lt;ol&gt;&lt;li&gt;Grate the potatoes and the carrot in a big bowl.

&lt;li&gt;Use your hands to press the mixture flat against the bowl and pour out the extra liquid.&lt;/li&gt;
&lt;li&gt;Place a pan on the stove on medium heat. Pour two to four tablespoons of oil in the pan.&lt;/li&gt;
&lt;li&gt;While the pan is heating up, add the egg, flour, and a little salt and pepper to the grated veggies and mix well.

&lt;li&gt;Now you&#039;re ready to cook the latkes. Using a big slotted spoon, scoop out about two tablespoons of the mixture and drop onto the pan. Use the back of the spoon to flatten them so they&#039;re about 1/4 inch thick.

&lt;li&gt;Allow the latkes to cook for five to eight minutes, or until the bottom is golden brown. Check the bottoms constantly with a spatula and flip them when they&#039;re ready.&lt;/li&gt;

&lt;li&gt;&lt;b&gt;Pirozhki &lt;/b&gt;: Pirozhki are small buns that are stuffed typically with a savory filling and then baked or fried. Some typical fillings include meat, onion, eggs, mashed potatoes, or cabbage.&lt;/li&gt;
&lt;li&gt;&lt;b&gt;Stroganov&lt;/b&gt;: Beef stroganov, or stroganoff, is cooked up in many a cafeteria today, but this recipe originated in Russia. It&#039;s typically pieces of beef served up in a sour cream-based sauce on top of egg noodles.&lt;/li&gt;
&lt;li&gt;&lt;b&gt;Blini&lt;/b&gt;: These thin, crepelike pancakes are enjoyed with either a savory or sweet topping. As opposed to the French crepe, blinis are made from buckwheat and are part of traditional Russian cuisine.&lt;/li&gt;

&lt;li&gt;In a small glass or stainless-steel bowl, combine the sour cream, milk, chives, vinegar, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper. Mix well and set aside.&lt;/li&gt;
&lt;li&gt;In a food processor with a grating attachment, grate the potatoes, 1 1/2 of the apples, and the onion. Transfer to a large bowl and stir in the parsley, eggs, bread crumbs, and the remaining 1 1/4 teaspoons salt and 1 teaspoon pepper.&lt;/li&gt;
&lt;li&gt;In a large nonstick frying pan, heat 1 tablespoon of the oil over moderate heat. Form the potato mixture into twelve pancakes about 21/2 inches wide and 1/2-inch thick, using about 1/4 cup of the mixture for each.&lt;/li&gt;
&lt;li&gt;Cook the pancakes in batches, turning once, until crisp and golden, 3 to 4 minutes per side. Keep the cooked pancakes warm in a 200° oven on a baking sheet lined with paper towels until the last batch is done. Use 1 tablespoon of oil for each batch.&lt;/li&gt;
&lt;li&gt;Cut the remaining apples into thin slices. Put them in a large bowl along with the greens. Add all but 2 tablespoons of the dressing and toss.&lt;/li&gt;
&lt;li&gt;Arrange the salad on plates and top with the pancakes. Drizzle the remaining dressing over the pancakes.&lt;/li&gt;
