About a month ago we received a package from Intentional Chocolate. I didn't try anything at first because the marketing material was way too new agey for me — everything is made with love and positive intention, and Dalai Lama-trained monks infuse meditative energy into the chocolate. Too kooky for me.

In my house Valentine's Day is all about chocolate. If you're trying to eat healthy, you may only stick to eating an ounce or so of dark chocolate a day for the health benefits. Plus, just a taste of dark chocolate with over 70 percent cocoa is enough to satisfy my chocolate craving.

Decadent chocolate stimulates your taste buds, and the caffeine and theobromine in this treat stimulate your heart rate in a way that could prevent you from falling asleep. There's nothing wrong with indulging in a piece of chocolate after dinner, but try to take your last bite well before bedtime.
Not all types of chocolate are equal in terms of the amounts of caffeine they contain.

Chocolate is one of those foods I always save room for. Not only is it the perfect way to end a meal, but it also has health benefits such as the ability to lower blood pressure and soothe coughs. One problem with chocolate, aside from it being high in calories, is that one of its main ingredients is sugar, so it's not good for your teeth.

But I thought dark chocolate was good for your health, so wouldn't you not want to reduce your craving at least for dark chocolate?

When I suggested that chocolate-flavored calcium supplements make a good substitute for dessert, many of you weren't so into the high-fructose corn syrup that comes with most calcium chews. The flip-flopping of whether NY eateries have to post calorie counts on their menu boards has got a lot of people thinking about where and when we want to see how many calories we're taking in.
A new concept has taken this idea literally by actually printing the calorie count right onto the chocolate bar, which means you'll see how many calories you're eating with each piece you break off. The idea is just that, an idea, and not yet available for purchase but it's still fascinating to think about.

I've been trying to eat more chocolate, only because it has antioxidants, can lower blood pressure, and can even soothe a cough. Well, I'm also addicted, but that's beside the point. I was checking out the label of a bar I picked up and noticed soy lecithin in the list of ingredients.
