Take advantage of in-season bounty by creating a
watercress salad, steaming
artichokes for snacking, roasting
asparagus for a side dish, adding
fennel to pasta, or swapping your romaine for mustard greens.

I should definitely rotate more veggies into my diet. I sometimes get in a rut and stick to the same ones for a long time. Lately I've been trying different greens...arugula, leaf lettuce, chard, dandelion, etc. I should try some watercress at some point. I haven't had it in a long time and I remember it being very grassy tasting. I'd probably really like it if I ate it now.
1I would do this but my husband has a very picky veggie pallet... oh well..
2I did this and now I've run out of vegetables.
