With Summer grilling in full force and smoke-tinged cocktails taking the helm at bars nationwide, the food world has been singing the virtues of liquid smoke. But what is this mysterious substance, and how does it obtain its trademark taste?

A concentrated flavoring used to duplicate the essence of smoked wood, liquid smoke is literally the flavor of smoke captured in water. Wood chips or sawdust are burned in a controlled environment, producing tiny smoke particles held in water vapor. Chilled air is introduced, causing the particles to condense into liquid. The liquid is then aged in oak barrels.

Liquid smoke is usually made from smoked hickory, mesquite, pecan, or apple wood, and can be applied to a gas grill to add a charcoal flavor, added to a meat marinade or curing solution, or used on soft cheeses and meatless proteins such as tempeh.

When you smoke a cigar, you're only supposed to suck the smoke into your mouth then blow the smoke out. So does that means it's any better for you than cigarettes?

It's still a tobacco product like cigarettes, right, so I think you know what the answer is. Large cigars typically contain between 5 and 17 grams of tobacco. Some premium brands have as much tobacco in 1 cigar as in a whole pack of cigarettes!

Plus, the tobacco in cigars is different than what's found in cigarettes. It's fermented tobacco, so it has a high concentration of nitrogen compounds. When smoked, these compounds give off several tobacco-specific nitrosamines (TSNAs), some of the most potent human carcinogens known. Also, because the cigar wrapper is less porous than cigarette paper, the tobacco doesn't burn as completely. The result is a higher concentration of nitrogen oxides, ammonia, carbon monoxide, and tar -- all very harmful substances.

Fit's Tips: When you go to a restaurant, choosing sweet potato fries is a healthier choice than regular French fries, but they're still deep-fried. To get your fill of the nutritious goodness in sweet potatoes, bake them whole (don't cut or poke them) in the oven at 400 for 40 minutes to an hour. If you love the fry idea, but don't want all the fat, just cut them up (leave the skins on), drizzle a little olive oil over them, and bake in a pan. Mmmmmm.
