Pumpkin Pie Avocado Pudding

Pumpkin Pie Pudding

Ingredients

  1. 1 large ripe avocado
    1/2 cup canned pumpkin
    1/2 package silken tofu
    4 dates
    1 tablespoon maple syrup
    1 teaspoon pumpkin pie spice
    Pinch of fine sea salt

Directions

  1. Mix everything in a food processor until smooth, several minutes.
  2. Divide between four dishes, top with a dollop of dairy-free yogurt, coconut whipped cream [1], chocolate chips, granola, or chopped pecans, and enjoy!
  3. If you're not eating it right away, chill in the fridge in a sealed container.
