Healthy Chocolate Peanut Butter No-Bakes

This recipe can be made gluten-free with GF oats and krispie cereal.
Ingredients
- Bottom and top layers:
2 cups rolled oats
1 cup raw cashews
10 dates, pitted
1/3 cup unsweetened cocoa powder
1/2 teaspoon salt
1 ripe banana
2 cups rice krispies cereal
2 tablesoons dairy-free chocolate chips
- Middle layer:
1 cup roasted salted peanuts
1/2 cup rolled oats
10 dates, pitted
Directions
- Place the oats, cashews, dates, cocoa powder, and salt in a food processor and blend until everything is a smooth, floury consistency.
- Add the banana and blend until a thick, slightly sticky dough forms.
- Add the 2 cups of krispies and pulse about 20 seconds to disperse the cereal evenly.
- Remove half the chocolate dough and place in a bowl for later.
- Flatten the other half of the chocolate-krispie layer into the bottom of a 7x11 pan using your hands over parchment or waxed paper. Place in the freezer while you make the peanut butter layer.
- Don't worry about cleaning out the food processor, just add the peanuts, oats, and dates, and blend a few minutes until a dough forms.
- Remove pan from the freezer, and, using the same technique, press the peanut butter layer on top of the chocolate-krispie layer. Place in the freezer for about 15 minutes.
- Remove pan from the freezer and smoosh the rest of the chocolate mixture over the peanut butter layer, press the chocolate chips on top, and freeze for at least an hour to firm up.
- Cut into squares and store remaining bites in a sealed container in the freezer.
