Protein-Packed Brownies

Ingredients
- 2 tablespoons flaxmeal
6 tablespoons water
1 cup white whole wheat flour
1/4 cup unsweetened cocoa powder
2 scoops plant-based protein powder (I used pea protein, about 1/2 cup)
1 teaspoon baking soda
1 teaspoon salt
3/4 cup brown sugar
2 cups oats (I used quick oats, but rolled oats works too)
2/3 cup canola oil
2/3 cup applesauce
1 teaspoon vanilla extract
1/8 cup chopped nuts
1 tablespoon mini semisweet chocolate chips (I used Ghirardelli)
Directions
- Preheat the oven to 350°F. Spray a 9-by-13-inch pan with cooking spray.
- In a small bowl, mix the flax meal and water together, and set aside.
- In a large bowl, mix together the flour, cocoa powder, protein powder, baking soda, salt, brown sugar, and oats.
- Add the oil, applesauce, vanilla, , and flax mixture, and mix until a thick dough forms.
- Press batter into the pan, top with nuts and chocolate chips, and bake for 15 to 18 minutes.
