Healthy Recipe: Soy Nut Butter Muddy Buddies

An old friend's recipe

Ingredients

  1. 1 cup soy nut butter [1]
    2 tbsp honey
    1/4 cup Earth Balance margarine [2]
    1 tsp vanilla
    1/2 cup raisins
    9 cups Rice Crunch-Ems cereal [3] (or Rice Chex)
    1/2 cup powdered sugar (optional)

Directions

  1. In a microwaveable bowl combine soy nut butter, honey, and margarine. Microwave uncovered on High 1 minute, stir. Microwave 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla.
  2. In a larger bowl, place the cereal. Pour soy nut butter mixture over cereal, stirring until evenly coated.
  3. Pour into 2-gallon food-storage plastic bag. Add powdered sugar. Seal bag and shake until well coated. Spread on waxed paper to cool. Pour into container and store in the refrigerator.

Makes 18 half cup servings.
