Healthy Dessert: Banana Cranberry Zucchini Muffins

Holy zucchinis! I wanted to plant two different kinds in my garden, and since the seedlings came in packs of four, my eight plants are bursting with gorgeous green veggies.

Holy zucchinis! I wanted to plant two different kinds in my garden, and since the seedlings came in packs of four, my eight plants are bursting with gorgeous green veggies. I've grilled it, stuffed it with quinoa, made Creamy Zucchini Boats, and pan-fried Zucchini Latkes, but this weekend I was in the mood for something sweet. I thought, why not combine two of my favorite bread recipes — zucchini and banana. The combination is more amazing than I thought it would be.

Healthy Treat: Banana Carrot Crumb Bread

As a cost-saving measure, I recently bought bananas in bulk at Costco.

As a cost-saving measure, I recently bought bananas in bulk at Costco. Unfortunately, my family just wasn't craving that fruit this week, and a gal can only eat so many bananas! With the warmer weather, the bananas ended up ripening quickly and I was left with five overripe bananas. Before the compost bucket became their fate, I used two to make chocolate smoothies, and the other three were used in this new recipe. This bread has a hearty, warm flavor, and is subtly sweet so it's perfect on its own, or toasted lightly and topped with peanut butter or jam.

Spring is coming soon, but for many of us, we still have some cold nights ahead of us. This time of year I always try to make my favorite cold weather foods like soups, breads, and warm treats before Spring officially blows in. Here's one my family loves that's easy to make, tastes oh-so decadent, but is a great source of fiber and protein. Make it to enjoy for breakfast or an after-dinner dessert.

Healthy Treat: Banana Crumb Muffins

Fresh fruits are a little sparse in these cold Winter months, so I've been buying more bananas since my beloved berries are out of season.

Fresh fruits are a little sparse in these cold Winter months, so I've been buying more bananas since my beloved berries are out of season. Last week I picked up a few too many, and they started getting brown before my family had a chance to eat them. So I decided to make lemonade out of lemons, or rather banana muffins out of overripe bananas. The crumb topping is what makes these muffins taste like dessert. Savor a warm muffin with some hot mulled wine in the evening, or serve them at your New Year's Day brunch.
