Fast & Easy Dinner: Stuffed Poblanos

Stuffed poblanos are an excellent choice for a festive Cinco de Mayo dinner, and if a chorizo and shrimp filling doesn't support your meat-free lifestyle, I've got the perfect vegetarian variation for you.

Stuffed poblanos are an excellent choice for a festive Cinco de Mayo dinner, and if a chorizo and shrimp filling doesn't support your meat-free lifestyle, I've got the perfect vegetarian variation for you.

This baked poblano recipe stuffs the pepper shells with a mixture of cornmeal, black beans, and jack cheese. A quick blender sauce consists of canned tomatoes, jalapeños, garlic, and onions.

The resulting dish is similar to enchiladas, but without tortillas. Serve a green salad with radishes and a lime vinaigrette on the side. Intrigued by the sound of this dish? Get the recipe now.

Huge Fan of the Pretzel Chips

I recently became Kettle Brand Pretzel Chips' biggest fan.

I recently became Kettle Brand Pretzel Chips' biggest fan. If you crave crunchy and salty foods, these are the chips for you. Plus, they're much healthier than greasy potato chips because they are baked.

They come in 3 delicious flavors - Original, Honey Dijon, and my fave, Fully Loaded - covered with sesame, poppy, and caraway seeds, with a hint of onion and garlic.

Another plus? The first ingredient is "Organic wheat flour," so you're not getting the enriched white garbage so many other pretzels are made with. And the rest of the ingredients are all things you've heard of and can pronounce.

Fit's Tips: These chips are sturdy and the perfect size for dipping. I especially love the combination of pretzel chips and hummus - a great idea for a healthy Super Bowl snack.

Does "Baked" Mean Better?

You've seen this before on a chip bag.

You've seen this before on a chip bag. "Baked not Fried." But does baked actually mean "healthier?"

The original Lays are made with good old potatoes, sunflower oil and salt.

The Baked Version contains a whole lot more non-food ingredients, which is kind of creepy if you ask me. They had to add leavening to make them look like chips. They took out the fat but to make them taste good, they had to add sugar. Who needs more of that in their diet?

Fit's Tip: Either way you slice it, (or name it in this case) chips just aren't healthy. If salty crunchy snacks are what you crave, why not try a handful of dry roasted nuts or edamame.
