These Low-Calorie Chocolate Brownies Offer a Kick of Protein, Too

I know eating a brownie as a snack is in no way a healthy decision, but sometimes the chocolate cravings are so strong that you have to give in. So why not add a little nutrition to each fudgy bite? Then you'll feel better knowing it's offering a little something besides happiness.

A cross between oatmeal cookies and brownies, these chocolaty bars are so insanely delicious that you won't even guess there's protein powder added to the batter. It gives these vegan brownies over five grams of protein, and since they're also made with flaxmeal, oats, and applesauce, you get a little fiber bonus, too.

Vegan Chocolate Oatmeal Protein Bars

Ingredients

  1. 2 tablespoons flaxmeal
    6 tablespoons water
    1 cup white whole wheat flour
    1/4 cup unsweetened cocoa powder
    2 scoops plant-based protein powder (I used pea protein, about 1/2 cup)
    1 teaspoon baking soda
    1 teaspoon salt
    3/4 cup brown sugar
    2 cups oats (I used quick oats, but rolled oats works too)
    2/3 cup canola oil
    2/3 cup applesauce
    1 teaspoon vanilla extract
    1/8 cup chopped nuts
    1 tablespoon mini semisweet chocolate chips (I used Ghirardelli)

Directions

  1. Preheat the oven to 350°F. Spray a 9-by-13-inch pan with cooking spray.
  2. In a small bowl, mix the flax meal and water together, and set aside.
  3. In a large bowl, mix together the flour, cocoa powder, protein powder, baking soda, salt, brown sugar, and oats.
  4. Add the oil, applesauce, vanilla, , and flax mixture, and mix until a thick dough forms.
  5. Press batter into the pan, top with nuts and chocolate chips, and bake for 15 to 18 minutes.
