Tenley stopped by for lunch and to talk with us about how to live a more healthy lifestyle. We made our fresh and lean tempeh salad. It's vegan, gluten-free, easy to make, and ready in minutes. Not to mention, totally delicious!
Fresh and Lean Tempeh Salad
4 oz. Tempeh (cut into thin strips)
1/2 Cup Carrots (grated)
1/2 Cup Cucumber (grated)
1/2 Lemon (squeezed)
2 tsp. Fresh Basil, Mint or Cilantro (finely chopped)
1 tsp. Mrs. Dash (any flavor)
1 tsp. Agave Syrup
Spray a small skillet with non-stick cooking spray, cook tempeh strips over medium heat for about five minutes until heated through. Season with Mrs. Dash while cooking. Remove from heat and toss together with all remaining ingredients in a bowl.
We recommend letting the tempeh chill for a few minutes after cooking and before mixing with the rest of the salad to make this dish cool and refreshing!
