1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
3/4 cup mashed baked sweet potato
1 cup vegetable oil
1 cup brown sugar
1 teaspoon vanilla
2 cups quick oats
1 cup dried cranberries
1 cup dark chocolate chips
- Preheat oven to 375° F. Lightly spray three cookie sheets with cooking spray.
- Mix flour, baking soda, salt, and cinnamon in a small bowl and set aside.
- In a larger bowl, beat the sweet potato, oil, sugar, eggs, and vanilla until smooth. Pour the flour mixture and oats into the bowl and mix well. Stir in the dried cranberries and chocolate chips.
- Spoon out 12 balls onto each cookie sheet.
- Bake for eight to 10 minutes, removing from oven when the edges are slightly tan. After a minute transfer the cookies to a cooling rack.
