Roasted Beet and Goat Cheese Salad

Enjoy as an appetizer or topped on a bed of greens, beets contain antioxidants that have been shown to reduce inflammation and detox the body. Recipe inspiration: roast different varieties of beets and top with crumbled goat cheese and lemon zest.

(Don't be alarmed if you notice red-colored urine, called beeturia, after enjoying this dish. An estimated 10 to 15 percent of all US adults experience it.)
