Pumpkin Oatmeal Coconut Bars

Ingredients

  1. 15-ounce can of pumpkin
    1/2 cup unsweetened applesauce
    2/3 cup sugar
    1 egg
    1 cup whole wheat flour
    3/4 cup quick oats
    2 teaspoon baking powder
    1/2 teaspoon baking soda
    1 teaspoon cloves
    1/4 teaspoon nutmeg
    1/2 cup chopped walnuts
    1/4 cup shredded coconut

Directions

  1. Mix pumpkin, applesauce, sugar, and egg until light and fluffy.
  2. Stir in flour, oats, baking powder, baking soda, spices, and walnuts.
  3. Pour into a lightly oiled 13 x 9 inch pan. Spread it out evenly with a spatula. Sprinkle on the coconut.
  4. Bake at 350° for 25 to 35 minutes. Cool in pan completely before cutting into bars.
