Breakfast, DK Style: Power Pancakes

I'll be the first to admit abiding by a sound nutrition plan does require discipline. You will have to make some adjustments to your eating habits, changes to your diet, and eliminate some foods for good (it’s all for the better!). But quite often, just a simple switch in a recipe can make all the difference between a healthy and heavy, tummy-bloating meal.

My Power Pancakes prove that you don’t have to sacrifice the experience of an enjoyable breakfast while following the DK plan. Rich in protein and whole grains, they feature the essential components of a sound breakfast — and contain no white flour or sugar! A great way to start the day after a morning workout, you won’t feel weighed down (or have the urge to go back to bed).

Power Pancakes

Ingredients

½ cup cooked steel-cut oatmeal
2 egg whites
½ cup water
¼ teaspoon cinnamon
1 scoop whey protein powder
Nonfat cooking spray
1 tablespoon nonfat plain yogurt
¼ cup sliced fresh strawberries

Directions

  1. In a large bowl, combine the oatmeal, egg whites, water, cinnamon, and protein powder.
  2. Heat a medium, nonstick skillet over medium-high heat, and coat with cooking spray.
  3. Place two heaping tablespoons of batter on the skillet. Cook 3 minutes, or until puffy and dry around the edges. Flip and cook on the other side, until golden brown.
  4. Serve with yogurt or strawberries.

Makes 1 serving.
