Made from dried corn kernals, polenta can now be found in most grocery stores. It's usually sold in its dry form, although you can buy it already cooked — I'm a fan of Trader Joe's version. A 120-gram package of polenta contains 70 calories, 0 grams of fat, 15 grams of carbs, and 2 grams of protein, so it's a healthy option as well. Make sure you store your precooked polenta in a cool, dry place. And for dry polenta, it should always be kept in your refrigerator after it's been cooked.
