Pizza Salad with Fresh Herbs + Feta
Serving Size: 4 (400 calories)
1/2 bunch Tuscan kale, stems removed, roughly chopped
1 cup baby spinach leaves
1/2 cup fresh basil, roughly chopped, loosely packed
1/4 cup parsley, roughly chopped, loosely packed
1 teaspoon fresh rosemary, finely chopped
1 teaspoon fresh thyme leaves, stems removed, finely chopped
5-10 fresh sage leaves
1 cup cherry tomatoes, sliced in half
1 cup sun-dried tomatoes, roughly chopped
1 red bell pepper, stem and seeds removed, roughly chopped
1/4 cup quinoa, dry
1/2 cup grated Pecorino Romano or parmesan cheese
3 ounces Feta cheese, cubed
2 1/2 tablespoons good extra-virgin olive oil
Sea salt and pepper, to taste
4 brown rice tortillas
