Look, I will be the first to admit that I've done a bit of microwave bashing in my day. However, a new study has come along and managed to make me eat my words . . . and my veggies. Here's why: in the study researchers found that on the whole, microwaving vegetables and fruits as a means to cook them was the least destructive to nutrients like vitamin C compared to other methods (aside from steaming). This is mainly because cooking methods like baking and grilling exposes foods to higher temperatures and more cooking time, which is destructive to nutrients.
However, go easy on the water because whenever vegetables are immersed in cooking liquid, water-soluble nutrients seep out of the food and into the surrounding liquid, which is why boiling them is not the best option either. To keep the nutrients intact when microwaving, you need only a couple of tablespoons of water to cook raw vegetables. The frozen ones need no extra liquid at all.

1I've been microwaving veggies forever mainly becuase its the quickest and easiest when I get home from work. My favorite is frozen broccoli, no water is needed in the bowl and then when its done in about 2 1/2 minutes, i sprinkle some grated cheese on top...Delish!
2I'll probably be the only one; but I disagree. I think microwaved food is unhealthy.
3i like to steam my fresh veggies in the microwave its just quicker that way and theres less to wash up after =D
4I put microwave broccoli in a bowl then put a plate on top of it and microwave that for about 3 minutes; stir, 3 more minutes. That way they are very nice and hot!
I don't like the idea of microwaving raw veggies though, i'd rather just put them in a pan with some olive oil.
5I'm with you dunnonuttin - I also think it's unhealthy.
6I wonder how nuking it in the microwave compares with roasting them on a tray in the oven. I imagine they'd be about the same health-wise, but the oven-done version more flavorful.
7To those who still think it is unhealthy, is there a specific reason you think it is?

11I just got some ziploc bags where you can steam veggies in the microwave. Haven't tried them yet though.
