Sick and tired of the old scrambled eggs routine? I sure am. User NdHerbert has been posting some really tasty recipes to the Lite'n it Up, Healthy Recipe Group and I am really loving this easy and healthy breakfast idea.
"I have been eating a lot of scrambled eggs (1 whole, 1 white) lately for breakfast, with sliced tomatoes. Since going Vegetarian, eggs are a prime source of protein for me.
This morning I did something a little different. I cut the top of a tomato off and scraped out the insides. I put some salt and pepper in the tomato and cracked an egg inside. I put a little salt and pepper on top with a few pieces of goat cheese. I baked for about 15 minutes in a 425 degree oven and it was done!
Baked eggs taste different than scrambled or pan fried, plus the presentation is so pretty. The tomatoes turn so red, the egg is white, and with a little sprig of parsley you have a pretty, easy, and healthy breakfast."

Halve and seed the pepper and throw it on the grill. My Argentinian friends taught me this, soooo good!

Vegetarians just don't eat meat. Vegans don't eat any animal product: no meat, eggs, dairy,...

20Tidalwave - just make it sans egg. I did last night and it was super good! I did a salt & pepper sprinkle inside the 'mater before I added the cheese. I also put in basil.

22sounds yum. i eat egg whites almost daily so this is a great way to mix it up.
23okay i tried it! except i added cumin, red pepper and diced onion. i also used an egg beater serving instead of a real egg, which might be why mine took so long to cook- the oven was at 425, but it took almost an hour for the egg beater to cook!!!
any suggestions as to why this would have happened??
24What is the calorie count for a scoooped out tomato?
25I am going to have this for lunch! Yum! I am growing basil and arugula on my deck in containers, so I am going to use them in this as well.
26um...calorie counts for a scooped out tomato??? First of all, it's next to nothing, tomatoes are mostly water, idk why you'd worry so much about it! (and this is coming from a fellow calorie-counter)
Second of all, why don't you just find the calorie count for a tomato and divide it in half or something? it might be too big, but it'll be close I guess.

28I made this last night and brought it to work for lunch today...SO delicious!!!!
29I baked this in a ramekin at 425 degrees, but it took closer to half an hour to cook. Think it was the ramekin, or is anyone else finding it takes longer to bake fully?
30It's so yummy! But like the other girls it took a bit longer for me too, but I don't think we know what the actual outcome is supposed to look like anyway. Is it supposed to be soupy or a bit like jello?
