I have been testing out a bunch of different Jamie Oliver recipes from his latest cookbook. My most recent favorite is the chopped salad. It is not fancy but incredibly delicious and really easy! The best thing is you can use this salad recipe as a jumping off point and just add what you have in the fridge, I also tried it with black olives, tomatoes and feta cheese! Delicious every time!

4 scallions Serves 4.
One handful of fresh basil leaves
2 small, just ripe avocados
1 butterhead lettuce
6 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon English mustard
Salt to taste
Ground pepper to taste
