A Reader Recipe: Surfer Style Nachos

Getting ready for the big game this weekend? These Surfer Style Nachos are loaded with fresh tomatoes, beans, salsa, and corn set atop a deliciously crunchy chip.

Surfer Style Nachos
Serving Size: 2-3

Ingredients
1 16 ounce can black beans
2 plum tomatoes, diced
1/2 cup corn (frozen is fine)
1 jar good salsa
1/2 bag Guiltless Gourmet Baked Chips
1/4 head romaine lettuce, shredded
Shredded cheese of your choice (optional)
Greek yogurt (optional)

Directions
Preheat oven to 400 degrees F.

Place the beans in a food processor with 1/2 jar of the salsa. Combine just until thick and chunky.

Place 1/2 bag of Guiltless Gourmet chips on a baking sheet. Add chunky black bean puree. Sprinkle corn (if you are using frozen corn, defrost it first), tomatoes, and remaining salsa on top. Add cheese if you like. Place in oven until the cheese melts.

Remove nachos from the oven. Add shredded romaine lettuce on top. Serve with dollops of Greek yogurt for added creaminess if desired. Yum!
