Mashed potatoes are my number one comfort food, but in the past couple years, they've gotten a bad reputation for being high in carbs. So I've figured out a way to add some protein without changing the flavor or texture. Add some silken tofu to your cooked taters before you mash them (one package per 10 cooked russet potatoes). Not only does the tofu increase the amount of protein, but it also adds creaminess so I don't have to include butter, which helps reduce the fat content. Just be sure to mix the tofu and potatoes thoroughly. Since tofu has no taste, not even my husband knows there's tofu in his garlic mashed potatoes.

I would be tempted to try it
1Do you think this would work for sweet mashed potatoes?
2I've mixed cauliflower with potatoes before, but this is a new idea to me. I may have to try this next time I make mashed potatoes.
3You could also substitute some of the potatoes for tofu instead of just adding it; so that you cut carbs next to adding protein.
4I love this idea! Adding some vegetable broth instead of some of the dairy is a good idea too.
5Go figure, I already made mashed potatoes earlier this week.
6Right on, veg, that's what I use, too. Potatoes, garlic, veggie broth, and chipotle peppers & sauce. Delish!
Huh, good plan. I'm totally gonna try this.

I'd try it, but I would prefer if someone else prepared it
